For the salsa

  • 320g pack mango chunks, diced
  • 1 large red pepper, deseeded and diced
  • bunch spring onions, finely chopped

  • 1 red chilli, chopped (optional)

Method

  1. Mix together the jerk seasoning, olive oil and lime juice. Toss the chicken in it and leave to marinate in the fridge for at least 20 mins, or up to 24 hours.

  2. Make the salsa by mixing all the ingredients together with some seasoning – add a chopped red chilli if you like extra heat.

  3. Heat the grill or barbecue to Medium. Thread the chicken onto 8 metal skewers divided by the yellow peppers – aim for 3 of each per skewer. Cook for 8 mins each side until cooked through and lightly charred. Serve with the salsa and rocket leaves.

great recipe, made it for a Caribbean project at school, tasted great but was disappointed with salsa as it wasn't exactly salsery, more like chopped veg

Made this last night as it looked so quick and easy, I had an unexpected guest for dinner and had to make a few changes due to unavailability of some ingredients, I used chicken thighs instead of breast and had to use pineapple instead of the mango but it worked. I added chopped coriander and fresh mint to the salsa, and also squeezed in some lime juice, plus salt and pepper, the salsa was really tasty and I would make that again to go with things like steak or fresh tuna. Needs a wee bit of tweeking this recipe, but I would make it again and again, very adaptable to whatever seasoning or marinade you can knock up!

Followed the recipe exactly, including the chilli in the salsa (much needed bit of heat to counter balance the sweet mango). Turned out delicious - I especially loved the taste of the lime coming through!

I used chicken breast for this and didn't bother cutting and skewering it. It turned out delicious, and the mango salsa was an interesting addition to it. Really liked it, would definitely try again

I didn't skewer the chicken. After marinating the chicken I popped it into a hot oven for about 35 minutes. It was lovely with the salsa.
