Tomato, watermelon & feta salad with mint dressing

This red and white delight is one summery side that goes with everything

Method

  1. Make the dressing by mixing the oil, vinegar, chilli flakes and mint with some seasoning.
  2. Put the tomatoes and watermelon in a bowl. Pour over the dressing and leave to stand for 10 mins to allow the fruit to get really juicy. Gently stir through the feta, then serve.

    This was a lovely, refreshing summer salad. The watermelon and feta are sublime. Served with lamb kofta and pitta bread.

    This is one of the tastiest salads I have ever had! And so easy. The subtle spice from the chilli flakes, mixed with the refreshing watermelon is just great. I too eat this with lamb, usually a lamb leg steak. Also good as a bbq salad!

    This is one of the best recipes ever, it's really easy to make, tastes fabulous and everyone i give it to loves it. It's really good with barbequed lamb
