Fish pie with swede & potato topping

Making fish pie can be a palaver - not this one! Reassuringly simple, and ready in just over an hour

Method

  1. Cook the potatoes and swede in boiling water until tender (about 20 minutes).
  2. Preheat the oven to 190C/gas 5/fan 170C.While the potatoes and swede cook, put the soft cheese and stock into a large saucepan and heat gently, stirring with a wooden spoon, until blended and smooth. Now add the blended cornflour and cook until thick.
  3. Stir the fish into the sauce with the prawns and parsley. Season with some pepper.
  4. Tip the mixture into a 1.5 litre/2¾ pint baking dish. Drain the potatoes and swede, mash them well and season with black pepper. Spoon the mash over the fish to cover it completely. Bake for 25-30 minutes until piping hot, then transfer to a hot grill for a few minutes to brown the top. Serve with frozen peas or sweetcorn.

Making it budget

For an economical version, add frozen peas and sliced mushrooms to the sauce instead of the prawns.

Making it special

Make a really special version by using salmon instead of cod and frozen seafood cocktail instead of the prawns.

    This is the simplest fish pie recipe I have ever tried and by far one of the tastiest! I loved the swede and potato topping it made a delicious change to plain old mash. I added peas and chopped boiled egg to the sauce to bulk it out even more. Will definitely be having this again! Yum!

    At first I wasn't sure about the soft cheese sauce, but it all worked out perfectly! A great way to use a whole swede as I almost never use a whole one from the veg box. I would definitely make this again!

    Made this last night for my partner and me. Didn't have many potatoes, so used a couple of sweet potatoes and 2 parsnips instead of swede. Also used half fat creme fraiche instead of the cheese, I find it's generally cheaper then some soft cheese, and can be used in more recipes. It tasted fantastic, I've tried a few fish pie recipes and this is definately the best! Adaptable too, throw in some peas or spinach into the sauce, or a splash of white wine!

    I usually substitute some of the cod for a fish pie mix, both for variety and the fact that cod is so expensive these days. A very tasty recipe, I usually rotate this recipe with the more indulgent one on this site. Both are tasty recipes, but the other isn't so saintly for your waistline!:)

    Amazing the best fish pie ever and really simple to make. I used salmon, cod and prawns and used a combination of the garlic mousse cheese and the herb mousse cheese from Lidl. My one year old loved it so much he had two portions!

    i made this last night, with sweet potato top and half normal cod, half smaoked cod and king prawns. went down really well but the sauce was a little too runny for me, even though i added an extra teaspoon of cornflour! would make again though.

    This was ok but I don't think I will be making it again as I prefer a fish pie with a runny texture to the filling. In this recipie the filling was quite solid, if I did make it again then I think it wouldbe best to omit the cornflour for a runny consistency.

    Bev - yes it's the generic version of Philadelphia cheese so just use a tub of the low fat or Philly light equivalent where you are - combinations of fromage frais, creme fraiche and yoghurt will also work well with your own garlic & choice of herbs added - I swap for dill or basil in mine

  • 650g skinless, boneless cod , cut into large chunks
  • 100g cooked peeled prawns
