Fish pie with swede & potato topping

Making fish pie can be a palaver - not this one! Reassuringly simple, and ready in just over an hour

Method

  1. Cook the potatoes and swede in boiling water until tender (about 20 minutes).
  2. Preheat the oven to 190C/gas 5/fan 170C.While the potatoes and swede cook, put the soft cheese and stock into a large saucepan and heat gently, stirring with a wooden spoon, until blended and smooth. Now add the blended cornflour and cook until thick.
  3. Stir the fish into the sauce with the prawns and parsley. Season with some pepper.
  4. Tip the mixture into a 1.5 litre/2¾ pint baking dish. Drain the potatoes and swede, mash them well and season with black pepper. Spoon the mash over the fish to cover it completely. Bake for 25-30 minutes until piping hot, then transfer to a hot grill for a few minutes to brown the top. Serve with frozen peas or sweetcorn.

Making it budget

For an economical version, add frozen peas and sliced mushrooms to the sauce instead of the prawns.

Making it special

Make a really special version by using salmon instead of cod and frozen seafood cocktail instead of the prawns.

    What a result! Usually i'm lucky if i get a grunt from the teenagers in my family but tonight i got a round of applause ( well almost!) Really tasty and filling. Definitely a family favourite now.My advice is give it a go!

    I made this fish pie for my Grandaughter and Parner and ourselves it was delicious we all loved it will make again so easy. I put peas in the pie and used sweet potaoe and Maris Piper for the topping

    This is really excellent low fat & quick way to make a white sauce, will definitely use this method again. I added leeks to my pie and used cod & prawns. The swede with potato topping made a nice change.

    I made this with a couple of packs of Tesco fish pie packs of fresh fish with contain smoked haddock, cod and salmon. Also added some prawns and peas. Topped with mashed potatoe and parmasan. Delicious, made twice now and will definately be a favourite when we have people over.

    i have made many different fish pies but found this one when looking for low fat recipes. Its really tasty and the kids love it,i always add 100g of salmon too and have used coley instead of cod as a really cheap alternative

    Excellent.Enjoyed by Granddaughters age 4 1/2 and 2 1/2. Used luxury fish selection plus prawns, peas and boiled eggs. No swede but used cheese in and on mash. Not so low fat but good!

    great recipe! quick and simple, never tried swede before but tasted really nice. made this for the family went down a treat except for one that didn't like prawns. added mushrooms, peas and sweetcorn in the pie too makeit go further, was plenty to go around.

    This is absolutely delicious. I was amazed and delighted how well this turned out; just the right amount of sauce and really great on the low cal front. I made two a big version and a baby version, leaving out the prawns and using full fat cheese for the baby and he ate the lot and so did we. Will be making this one again

  • 500g floury potatoes , cut into chunks
  • 1 medium swede (weighing about 600g/1lb 5oz), cut into chunks
  • 200g tub low-fat soft cheese with garlic and herbs
  • 150ml vegetable stock
