  • 1 cucumber (peeled, de-seeded and diced)
  • 3 good sized tomatoes (diced)
  • 2 good sized spring onions (or 3 if puny) (sliced - with green tops)
  • 1 roasted red pepper from a jar (or fresh if you prefer - diced)
  • good handful of flat leaf parsley (chopped)
  • 100-150g Sirene (white brined cheese - crumbled)
