  • half small red onion, thinly sliced

Method

  1. Heat grill to medium. Rub the chicken all over with 1 tsp of the olive oil and the paprika. Cook for 4-5 mins each side until lightly charred and cooked through.

  2. Mix the salad ingredients together, season and add the rest of the oil. thickly slice the chicken and serve with salad.

First time I've tried avocados but really liked them. Super tasty salad. We had it with pork chops tonight but almost any meat or fish would be great. Will make again

Yup good one.
I used spring onion because I didn't have red, and coriander instead of parsley (er, by accident...)
I served it with giant cous-cous and asparagus.
For a salad dressing I shake extra-virgin olive oil, lemon balsamic vinegar (2:1), a pinch of sugar and an even smaller pinch of mustard powder.
Definitely a keeper.

This was really easy to make and it's also healthy and tasty. I love avocado and tomatoes but I added spring onions as I didn't have any red onion and I also added some spinach leaves to it and a bit of cucumber then used lime juice as the dressing. Very nice and I will make it again definitely.

I wouldn't say this dish is anything special, a simple salad to throw together if you're in a rush, but I won't be rushing to make this again.

I doubled this so I would have some for lunch the next day, and for me there was too much onion, and it overpowered the rest of the flavours. I would use the half onion for the doubled portion, and a quarter for single. Also, the cooking time alotted isn't enough - I grilled the chicken then had to bake it for a further 5 minutes for it to be cooked through.

Made this tonight but altered it slightly by adding bacon lardons, used a whole avocado, added two big handfuls of fresh spinach, used the juice from half a lime instead of red wine vinegar, used sunflower oil instead of olive oil (less strong) and omitted the onion, parsley and tomato. Come to think of it...I didn't really make this at all!! Rather I was inspired by it :)

Either way it was delicious, really filling and no carbs! I docked a star because I think my own version sounds nicer :-D

Even without the salad, after making this recipe once I now cook chicken in paprika all the time. It makes boring plain chicken breasts into something really delicious without having to buy any extra ingredients and takes no time at all. Really recommend it for students like me.

Super salad although I discovered I don't like avocado, but my boyfriend does! Doubled ingredients for the two of us and served with home-made spicy potato wedges. Alone, this recipe isn't enough as a main course.

Yummy and surprisingly filling! 1/2 red onion is perhaps a bit too much though.
