Chicken breast with avocado salad

A satisfying solo salad that's superhealthy - great for a busy worknight supper

Method

  1. Heat grill to medium. Rub the chicken all over with 1 tsp of the olive oil and the paprika. Cook for 4-5 mins each side until lightly charred and cooked through.
  2. Mix the salad ingredients together, season and add the rest of the oil. thickly slice the chicken and serve with salad.

    Very tasty. I cooked the onions with a little balsamic as I'm not a fan of them raw. Served with new potatoes perfect summer dinner.

    This was really simple to make, quick and tasty. Didn't have any red onion though so put some chopped beetroot in and it was delicious. Served with crusty bread.

    Super salad although I discovered I don't like avocado, but my boyfriend does! Doubled ingredients for the two of us and served with home-made spicy potato wedges. Alone, this recipe isn't enough as a main course.

    Even without the salad, after making this recipe once I now cook chicken in paprika all the time. It makes boring plain chicken breasts into something really delicious without having to buy any extra ingredients and takes no time at all. Really recommend it for students like me.

    Made this tonight but altered it slightly by adding bacon lardons, used a whole avocado, added two big handfuls of fresh spinach, used the juice from half a lime instead of red wine vinegar, used sunflower oil instead of olive oil (less strong) and omitted the onion, parsley and tomato. Come to think of it...I didn't really make this at all!! Rather I was inspired by it :) Either way it was delicious, really filling and no carbs! I docked a star because I think my own version sounds nicer :-D

    I doubled this so I would have some for lunch the next day, and for me there was too much onion, and it overpowered the rest of the flavours. I would use the half onion for the doubled portion, and a quarter for single. Also, the cooking time alotted isn't enough - I grilled the chicken then had to bake it for a further 5 minutes for it to be cooked through.
