Chickpea & coriander burgers

Method

  1. In a food processor, whizz the chickpeas, lemon zest, lemon juice, cumin, half the coriander, the egg and some seasoning. Scrape into a bowl and mix with 80g of the breadcrumbs and the diced onions. Form 4 burgers, press remaining breadcrumbs onto both sides and chill for at least 10 mins.
  2. Heat the oil in a frying pan until hot. Fry the burgers for 4 mins each side, keeping the heat on medium so they don't burn. To serve, slice each bun and fill with a slice of tomato, a burger, a few red onion slices, some cucumber slices, a dollop of chilli sauce and the remaining coriander.

    I made this recipe for mysef, my husband and our 2 year old daughter and it got a thumbs up all around the table. It's a strange day when my little monkey will clean her plate but clean it she did. As for my husband, he's a total carnivore and talk of anything (shhhhhhh) vegetarian is grounds for sulking. In fact, I had to make an ADDITIONAL meatball dish for his silly self in case he refused the goodness that was the chickpea burger. In the end he ate the meatballs but only after eating TWO chickpea burgers. Yes, he's a piggy. I made the recipe almost exactly as it was written here but I added a tiny bit of curry. Curry finds its way into most my culinary visions, I just can't help myself! It was wonderful and this recipe has now graduated from a little slip of paper to a spot in the COOKBOOK OF ALL THAT IS DELICIOUUUUUSSSSSS! That is the grand name of my favorite cookbook where I store all the best recipes. THAT is how much I liked this one! Yay chickpea & coriander burgers!

    Did things a bit differently to the recipe above .. 5 shallots (didn't have a red onion).. 1 large grated carrot ... 2 eggs into the mix as well .. Ended up with 6 decent sized burgers ... might add a bit of curry powder or chilli the next time to add a little kick :) VERY tasty :)

    Who would have thought a burger made from chickpeas could taste so good?! Made as per the recipe in the morning and chilled in the fridge until ready to fry up at teatime. Quick, easy, tasty, cheap and healthy. I'm now a chickpea fan thanks to this recipe and the chicken biryani bake recipe (also from this site). Go chickpeas!

    Really easy,quick and tasty - a keeper! I spiked the mix with some chopped chilli,parsley and some Ras El Hanout for a Morrocan slant and we had them with home made pitta and salad. Variations are endless,great recipe.

    I've been looking for a good and easy burger recipe for a while, especially after moving abroad as frozen vegetarian burgers are not available in the shops, and now I love this one. I've made it lots of times now and the recipe is easily doubled, so I can freeze the rest of the burgers. I use ground coriander and it works well. Lovely recipe!

    By the way, I've found that it's best to fry the onions for a bit first, otherwise they taste a bit raw.

    I loved these!! The only thing i would do differently next time (as i loved the crispy outside) is make them half the size and have 2 in each bun but they are perfectly delicious as they are!

    These were great. They freeze really well, i froze mine before cooking and when required just defrosted them and fried them up. Sweet chilli sauce really complements the flavour of the coriander and lemon.

    Very tasty although I found it a little dry. I did grill rather than fry so perhaps that was why. Added the chopped onion to the blender rather than just to the mix and this worked well. Plenty for four even though it doesn't look like it from the basic ingredients! Filling.
