Spicy root & lentil casserole

Method

  1. Heat the oil in a large pan and cook the onion and garlic over a medium heat for 3-4 minutes until softened, stirring occasionally. Tip in the potatoes, carrots and parsnips, turn up the heat and cook for 6-7 minutes, stirring, until the vegetables are golden.
  2. Stir in the curry paste or powder, pour in the stock and then bring to the boil. Reduce the heat, add the lentils, cover and simmer for 15-20 minutes until the lentils and vegetables are tender and the sauce has thickened.
  3. Stir in most of the coriander, season and heat for a minute or so.Top with yogurt and the rest of the coriander. Serve with naan bread.

    I wasn't keen on the carrots and parsnips in the recipe but the rest makes a fantastic base for a vegetable curry!

    made this twice now , but had to use green lentils (put them in at the first step) as we live in france and they do not seem to have red lentil s here (?) . Really hearty recipe and it has now made it onto our menu in our restaurant in the french ski resort of Tignes (Le Brasero )

    Really nice winter warmer and very easy to make. I didn`t have any curry powder, so used Cajun spice instead. I also did some flatbread (with added minced garlic paste)which is also on this site. It all went down a treat. :-)

    Tasty and hearty, a great winter dish, Good for using up any leftover veggies. I too found 150g lentils makes for a better, thicker consistency. I have taken to adding frozen chopped spinach as well which complements the lentils nicely, yum!

    Was my nicest dinner ever! I used fake beef quorn pieces (!) instead of lentils.. Paprika, cayenne pepper & garam masala instead of curry & sour cream instead of yoghurt. All worked well. Had a good kick! Will defo get some lentils in for next time...
