Prawn chow mein

This low-fat stir-fry recipe is packed with crunchy vegetables and tangy oyster sauce

Method

  1. Cook the noodles, broccoli and corn in boiling water for 3-4 mins, or until tender. Drain and set aside. Heat the oil in a large frying pan or wok and fry the pepper for 3 mins, until starting to soften.
  2. Tip in the noodles and vegetables along with the prawns and toss together. Add the sauce ingredients and heat everything through for 2-3 mins, until piping hot.

TIP

If you have any leftover roast chicken, shred it and use along with the prawns.

    Made this for supper tonight, very nice! I added a bunch of spring onions to the pan with the red pepper. Enjoyed lovely crunchy, fresh vegetables. Will be making this again.

    I thought it was easy and tasty, although it did need a bit of chilli and ginger to spice it up and be careful that you don't put too much tomato sauce in as this made it a bit sweet.

    This went down a storm with my 6 yr old daughter and is a great way to get her to try more veggies. I made it with leftover roast chicken instead of prawns and added an extra tbsp of oyster sauce, but still very tasty. So easy to make, even my husband managed it!!
