Gnocchi with courgette, mascarpone & spring onions

Method

  1. Cook the gnocchi following pack instructions. Drain, reserving a ladle of the cooking water, and set aside.
  2. Heat the oil in a frying pan. Cook chilli and courgette for 3 mins until soft. Add spring onions, zest, mascarpone, half the Parmesan and cooking water. Mix until smooth, add gnocchi and heat through.
  3. Season, divide between 2 ovenproof dishes and scatter with the remaining Parmesan. Grill for 2-3 mins until bubbling and serve with the dressed mixed leaves.

USE UP LEFTOVER MASCARPONE

Brioche with mascarpone & strawberries for 2 - Beat together 4 tbsp mascarpone with 1 tbsp icing sugar. Toast 4 thick slices brioche and spread with the mixture, then top with 100g strawberries, halved.

    This is delicious and fabulously easy and quick to make. We added more courgette to give us one of our 5 a day and on one occasion substituted the mascapone for a combination of philadelphia light and low fat creme fraiche- just as tasty.

    This was really easy to make and very tasty and filling. I added a clove of garlic to the chilli and courgette and I will probably add more courgette next time. Very nice x

    Yummy!!! Both me and my other half loved this!! Took on board what other people said and used low fat Phillidelphia and added some garlic as well. Also added to 2 medium courgettes - wouldn't want any less in there! The lemon added a really nice taste too. Will be making again! Lovely!

    quick and tasty. Made the gnocchi myself. Didnt have fresh chillie so added to crushed dry red chillies. Added a nice colour as well

    yummy, kind of lacking on some of the ingrediants... substituted the marscapone for 2 tbsp of light mayonnaise and the cooking water for a splash of whole milk spring onions for a small onion and added garlic, yellow pepper and dried chillies oh yeah and used lancashire cheese instead of the parmesan- worked for me and what was in my cupboard :D

    Really tasty, we substituted a few items (dried crushed chillis, lemon juice, cheddar etc) but still turned out really tasty. Also added some mushrooms and leeks (instead of spring onion) and seasoned. We also used more gnocchi (500g) but perhaps we're just greedy!! Anyway, nicely flexible recipe and delicious!!
