Indonesian fried rice with mackerel

On the table in just 20 minutes and cheap to make too, this one-pan supper will satisfy everyone

Method

  1. Heat the oil in a large frying pan or wok. Tip in the eggs and swirl to coat the base of the pan. Cook for 1 min, then flip and cook the other side until set. Remove and roughly chop into ribbons.
  2. Add the curry paste and sugar and fry for 1 min. Tip in the rice and stir to coat in the paste, then add the spring onions and peas. Stir-fry for 2-3 mins until everything is really hot. Add the soy sauce, then gently toss through the omelette ribbons and mackerel.
  3. Divide between 4 bowls and garnish with the cucumber. Serve with extra soy sauce, if you like.

TIP

Peppered mackerel fillets would also be great here. if you're not keen on fish, try sliced ready-cooked chicken breasts.

    Not entirely sure what's 'Indonesian' about it...but all the same it's a really tasty,simple & quick midweek supper with punchy flavours. Great use for leftover rice.

    This recipe was REALLY quick, easy, tasty and cheap to do too. All qualities I love! My only comment would be that it was quite salty. Also I did add more thai paste than suggested. I will be making it again though.

    This certainly is quick and cheap, and, an exciting method of getting the all important omega 3 into one's diet! I used 'Bart' Red Thai Curry paste, and my only comment is that the dish wasn't as spicy as I was expecting, in fact.. it wasn't spicy or hot at all. Whether this is the paste I used, or the quantity (1 tbsp), I can't say, but worth bearing in mind. Nonetheless, was a cracking meal requiring little effort... perfect for a monday evening!

    Agree with person who said did not know what was Indonesian about it. Also smoked mackerel is already salty so need to watch how much salt is added to finished dish. Good way of using up left over rice. Left out cucumber and replaced with shredded white cabbage and used curry paste with cumin and coriander which I had leftover in the fridge. Worked very well. My 8 year old austisic son who enjoys freshly cooked home meals lapped it up!

    I made this as I had some smoked mackerel in the fridge and wanted to make something HOT with it (as opposed to salad) as it is so freezing at the moment! Was really pleased with the dish, was dead easy and used things that I already at home. Felt healthy, was cheap and a bit different.

Ingredients

  • 1 tbsp olive oil
  • 2 eggs , lightly beaten
  • 1 tbsp red curry paste
  • pinch caster sugar
  • 800g cooked basmati rice (about 250g-300g uncooked)
  • small bunch spring onions , sliced
  • 140g frozen peas
  • 2 tbsp soy sauce , plus extra to serve
  • 4 smoked mackerel fillets, flaked
  • ½ cucumber , cut into half moons
