Ingredients

  • 4 baking potatoes
  • 450g minced beef or lamb
  • 1 onion, chopped
  • a good splash of Worcestershire sauce
  • 284ml carton beef stock or 300ml/½ pint beef stock made from a cube
  • 1 tbsp tomato purée
  • a splash of milk
  • a knob of butter
  • 50g mature cheddar, grated

Method

  1. Put the potatoes in the microwave on high (750W) for 20 minutes until cooked through. While they’re cooking, tip the mince and onion into a pan and cook on the hob for 10 minutes until the onion is golden and the mince has lost its pink colour. Splash in the Worcestershire sauce and cook for 1 minute, then pour in the stock and squeeze in the tomato purée.Give a good stir to dissolve the purée, then cover and simmer for 20 minutes or until the meat is tender.
  2. Cut each potato in half and scoop the flesh into a bowl, leaving a thin layer inside the potato skin. Break up the flesh with a fork, then season and mash in the milk and butter until smooth and creamy.
  3. Preheat the grill to high. Put the potatoes skin side down in a shallow roasting tin and spoon in the meat mixture. Top with the mash and sprinkle with the cheese. Grill until the cheese has melted and the filling is hot. Serve with steamed green vegetables.

I baked the potatoes in the oven first - rubbed them first with some olive oil, then rubbed some sea salt into the skins. I also added some parlsey and "herbes de provence" to the mince mix, and some parmesan cheese in with the mashed potato.

I prepared this well ahead and left the stuffed and topped potato halves on a baking tray - then I just put the lot in the oven (top heat only for a grill effect) for about half and hour.

Lovely.

Just to say that this is the nicest lunch I have had for such a long while!! I microwaved the potato first as I was starving lol. Then omitted the butter and milk from the potato as I'm trying to lose weight I added a teaspoon of wholegrain mustard and the outcome was superb!! Thank you 'good food' it certainly is!!!! Keep them coming! xxx

i like spicy food so i added sdme tabasco sauce and a little tomato puree ,it was great.

Was lovely. Done the jackets in the oven though so they held the mince in better. Surely will be cooking this again.

I found these a little bit on the dry and dull side. I think a tin of chopped tomatoes in with the mince would have made it all a bit juicier. It basically does what it says on the tin....

I made this using chilli from the Chilli Pasta Bake (I'd made double!) and it was really great...the kids loved it.

Shepherd's pie jackets. This turned out brilliant. The recipe was for 4 people, and because we are only 2 I saved half of the mince till the next day. It was really good then if not better. Full marks

Surely you don't need instructions for baking potatoes in a conventional oven?!

Can't you also have instructions for how to cook this in a conventional oven? Some people (believe it or not) do not have microwave ovens.
