Onion and bacon risotto

Very cheap and easy to make, and very tasty.

  • 1 medium onion
  • 4 rashers of bacon
  • 75 grams risotto rice per person
  • 2 or 3 vegetable stock cubes
  • tinned chopped tomatoes


    1. Chop and fry the onions and bacon together with some olive oil
    2. Add the risotto rice to the onion and bacon mixture, and cook until it's clear
    3. Add two or three stock cubes to the rice, bacon and onions and add 3/4 of a pint of boiling water for each stock cube you've added
    4. Add the chopped tomatoes, stir
    5. Serve!

This is a great recipe to use if you have no meal plans. One day a couple of weeks ago,I got home from work shattered and i dident want to cook. Fortionatley,i rememered finding this recipe the day before and i knew it would be a great easy solution! It only took me around 15 or less mins to make and it tasted divine. :-)
