Method

  1. Place the sour cream and mascarpone in a pot on medium heat and bring to boil stirring occasionally.
  2. In the meantime chop the tomatoes and the basil and add them to the pot. Bring to the boil stirring occasionally.
  3. Squeeze 3 of the garlic cloves into the pot. Mix the tomato purre with the water and add to the soup with some salt to taste.
  4. Simmer gently stirring occasionally for about 20 minutes, add the last clove of garlic and simmer for further 5 minutes.
  5. Serve with garlic bread

    I made this soup for a starter for come dine with me with my friends and added some red pepper to it. It was lovely and creamy and my friends really enjoyed it. I doubled the recipe as there was four of us, we had good size portions and still had plenty left over :)
