Soba noodle salad with Asian peanut dressing

You can knock up the dressing for this with mostly storecupboard ingredients. It’s also great as a sauce for BBQ chicken

Method

  1. Cook the noodles following pack instructions, be careful as they can go mushy very quickly. Drain, rinse under cold water and drain again.
  2. Put the peanut butter in a bowl, add the other dressing ingredients one by one then whisk in 3-4 tbsp boiling water from the kettle until you have a thinnish dressing consistency.
  3. Put the noodles in a large bowl, add the vegetables and the dressing and toss everything together.

    This was a delicious meal and very simple to make! The dressing looked dubious at first but once I had mixed it in with the noodles it worked very well. Having the noodles cold also also added nicely to the dish. I will be making this recipe again!

  • 75g dried soba noodles
  • 4 spring onions , shredded
  • 100g mange tout , halved lengthways
  • 100g baby corn , halved lengthways
  • ½ red pepper , thinly sliced

DRESSING

  • 2 tbsp crunchy peanut butter
  • a small chunk ginger , finely grated
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 tbsp rice wine vinegar
  • 1 tbsp chilli sauce
