Apple galettes
These smart tarts are easy to make, and look glam enough for a dinner party

Ready in 40 minutes
- Heat the oven to 200C/fan 180C/gas 6. Roll out the pastry to the thickness of a £1 coin and cut into 4 circles (use a saucer as a template). Prick all over with a fork and chill on a baking sheet.
- Arrange the apple slices on the pastry in a neat pattern and sprinkle with the sugar.
- Bake for 20-25 minutes until the edges are puffed and golden. Brush with apricot jam.

- 500g puff pastry
- 1 tbsp golden caster sugar
- 2 tbsp apricot jam , sieved and mixed with a little water to make it liquid
