Apple galettes

These smart tarts are easy to make, and look glam enough for a dinner party

Method

  1. Heat the oven to 200C/fan 180C/gas 6. Roll out the pastry to the thickness of a £1 coin and cut into 4 circles (use a saucer as a template). Prick all over with a fork and chill on a baking sheet.
  2. Arrange the apple slices on the pastry in a neat pattern and sprinkle with the sugar.
  3. Bake for 20-25 minutes until the edges are puffed and golden. Brush with apricot jam.

    These are a lovely end to an informal supper. So easy to make - and they reheat perfectly too so you can make in advance. Served with lightly whipped cinnamon cream - delicious.

    These tasted really great and so easy to make too. Didn't have any apple juice so just used orange juice to stop the apples browning. Didn't bother sieving the jam. Served with vanilla ice-cream.

  • 8 apples , peeled, cored and sliced thinly , tossed in apple juice to stop them browning
  • 500g puff pastry
  • 1 tbsp golden caster sugar
  • 2 tbsp apricot jam , sieved and mixed with a little water to make it liquid
