- Put the crushed garlic cloves and egg yolks in a blender with Dijon mustard, blend to a paste and then with the motor still running add the olive oil in steady stream to make a thick mayonnaise. Add a squeeze of lemon juice and a splash of water to let it down a bit.
- Season well.
