Sweet potato & lentil soup

Method

  1. Put the curry powder into a large saucepan, then toast over a medium heat for 2 mins. Add the olive oil, stirring as the spice sizzles in the pan. Tip in the onions, apple, garlic, coriander stalks and ginger, season, then gently cook for 5 mins, stirring every so often.
  2. Meanwhile, peel, then grate the sweet potatoes. Tip into the pan with the stock, lentils, milk and seasoning, then simmer, covered, for 20 mins. Blend until smooth using a stick blender. Stir in the lime juice, check the seasoning and serve, topped with roughly-chopped coriander leaves.

    Wish I had read comments about not grateing before I made it as will definately not do that the next time!! The soup is really lovely, love the freshness of the lime and coriander at the end, simply delicious and is in my binder for the future.

    Like many people I used chunks instead of grating and just simmered fro longer. Also used just 1.5 tsp of mild curry powder which made it milder and suited the family better. Very tasty and will make again. :-)

    Absolutely delicious, especially on a rainy day! Didn't grate anything as said in the recipe but blended all the ingredients at the end when the soup was cooked.

    Delicious. I used Frylight instead to keep fat content as low as possible! Ideal to take into work for lunch and freezes and reheats brilliantly!

    Like everyone else didn't bother grating all the ingredients as its really not necessary. Loved the flavours in this soup, however i preferred the soup before the addition of the lime. All in all a very tasty soup.

    Loved it!! I didn't bother to grate the potatoes - just chopped them. We're dairy free, so omitted the milk (didn't add any dairy substitutes) and it was delicious - even my toddlers loved it! Even hubby, who isn't a soup fan, had 3 bowls!

    I have now made this soup 4 times.its so tastey and still have 3 portions in the freezer,changed nothing in the recipe other than i didn't grate anything just chopped it.

    I had such high hopes for this soup after reading all the comments so was quite disappointed by the end result. Too runny for my personal preference, and it was quite bland, especially when compared to what ingredients went in to it. I'm really not sure why mine was so bland as I did everything the recipe says.. ho hum. Would suggest adding more spices and less stock, but I won't be making this again...

    Lovely. As others have suggested I didn't grate the ingredients just chopped them small and didn't liquidise it either and everyone loved it - except Archie aged 7 but then I didn't really think he would!

    Didn't have coriander but was lovely without. Soup was thick and tasty. Wish I'd read the reviews before I spent ages grating the sweet potato though. Will definitely be making again and no grating next time!
