Sweet potato & lentil soup

Method

  1. Put the curry powder into a large saucepan, then toast over a medium heat for 2 mins. Add the olive oil, stirring as the spice sizzles in the pan. Tip in the onions, apple, garlic, coriander stalks and ginger, season, then gently cook for 5 mins, stirring every so often.
  2. Meanwhile, peel, then grate the sweet potatoes. Tip into the pan with the stock, lentils, milk and seasoning, then simmer, covered, for 20 mins. Blend until smooth using a stick blender. Stir in the lime juice, check the seasoning and serve, topped with roughly-chopped coriander leaves.

    Lovely soup! I normally manage to mess soups up but this was so easy once I'd finished grating! I think next time I'll add a bit of chilli to give it an extra kick

    This was quite good. I didn't have curry powder on hand, so I substituted the curry powder for garam masala and amchor. Also, having made this with both cow and coconut milk, I must say, coconut milk gives the soup a wonderful complexity that I find is missing when using cow's milk.

    Like others, grated only the ginger. I also used 150ml coconut milk and 150ml skinny milk instead of the 300ml milk only. I think it works superbly. Gorgeous. In fact, I'd go so far as to say that, produced with the coconut milk, this is one of the best soups I've had.

    I chop the following vegetables to taste: Onion Celery Parsnip Potatos Carrots And on:e breast (or leg) of chicken Boil for 15 min. then add lentils and boil for a further 15 min. Add some single cream and frozen peas. Remove chicken and blend everything else, then add the cut-up chicken. Soup consistancy to taste. Eat with thick slices of granary bread. This is a complete meal !!

    Fantastic soup for a cold day (like today), also very tasty without adding a lime juice. I have not blended my soup (as I prefer to taste the vegetables), but made sure that I cut sweet potatoes into small chunks, cut onion into fine pieces and grated apples. All with very good results.

    Just made a batch and it's amazing , also started grating and halfway gave it up and chopped. Also added in some more curry extra kick ....may add in prawns next time when cooking the curry ,then remove and add in just before the end ...will see and report back ...

    Made this soup last night, first soup I have made and it tastes delish. I grated everything too without reading other comments and it was the biggest pain! Will definitely just cut up next time

    Do not grate the ingredients it is absolutely not necessary. Very tasty soup, quite sweet but then it is made with sweet potatoes. Will be making again.

    Very nice. I thought it tasted a bit like a sweet curry. Not sure if that was due to me using mild indian curry paste rather than curry powder. Might use more than one lime in future to cut the sweetness a bit.

    I have just discovered tandoori curry powder and it made this soup utterly amazing. Tandoori curry powder has a slight sweet chilli flavouring and would make a fabulous dhansak.

    I made this last night, absolutely scrumptious. I used madras curry paste and didn´t bother to grate everything as I knew I was going to whizz it all up. Will definately be making this again. I´ve even got some in the fridge at work to have for lunch.

    I read the previous comments and made this with coconut milk instead of cow's milk. I also used a pouch of preprepared puy lentils instead of the red lentils. I have to say that this is the best soup I have ever made, maybe even ever tasted! Went down well with all members of the family.

    Absolutely love this soup. I didn't have quite enough sweet potato, so used half a butternut squash too. It was delicious - will definitely make again. I can recommend this for making in the slow cooker. It took approximately 2 hours on high.
