Sweet potato & lentil soup

Method

  1. Put the curry powder into a large saucepan, then toast over a medium heat for 2 mins. Add the olive oil, stirring as the spice sizzles in the pan. Tip in the onions, apple, garlic, coriander stalks and ginger, season, then gently cook for 5 mins, stirring every so often.
  2. Meanwhile, peel, then grate the sweet potatoes. Tip into the pan with the stock, lentils, milk and seasoning, then simmer, covered, for 20 mins. Blend until smooth using a stick blender. Stir in the lime juice, check the seasoning and serve, topped with roughly-chopped coriander leaves.

    Really really tasty - I agree with barney123 no need for all the grating, especially if the final product is being blended. I chopped the majority of ingredients and it still worked out well. Even my fussy 18month old enjoyed it. Def make again.

    This is lovely, i also agree there is no need for all the grating. In the end i only grated the apple, and the ginger and cut the potato into rounds about 1-1/2cm thick, as the soup is simmered the ingredients soften anyway and then it is blended so no need to go to all that trouble, plus i was dreading grating the onion, this i sliced thinly. I made this as my fella has this dreaded swine flu so wanted to give him some nice and healthy home comfort food. I will definitely be making this again.

    Made this soup for my husband who has a bad cold. Didn't quite have enough sweet potato so used some pumpkin as well. I didn't grate, just chopped. We both really enjoyed this soup and I would definitely make it again.

    Really tasty, my husband says this is the best of my soups that he has tasted. Coming from him, this is a big compliment. It's pretty good for you, too. I did all the grating, but now having read the other comments, I shall be chopping next time!

    Absolutely delicious! I also just chopped ingredients which is fine when it's cooked. As I need this soup to be as fat free as possible, I replaced the olive oil with Fry Light spray and left out the milk which can be replaced with water if you need more liquid. This is definitely a new favourite!
