Coffee semifreddo

This elegant dessert is easy to slice straight from the freezer

Method

  1. Oil and line a 1-litre loaf tin with cling film. Put the coffee, Tia Maria or brandy, egg yolks and sugar in a bowl and stir to dissolve the coffee. Put the egg whites in a large bowl and pour the cream in another.
  2. Beat the egg whites until stiff with an electric whisk, then quickly beat the egg yolk mixture until thick and leaving a trail. Now beat the cream until it holds its shape. If you beat everything in this order, you don't need to wash the whisks in between.
  3. Fold the cream into the coffee mixture, then carefully fold in the whites. Fold through the Toblerone and tip into the loaf tin. Lightly cover the surface with cling film. When frozen, overwrap in foil and freeze. Will keep for up to 6 weeks. You can make the chocolate curls (see video link, above, for instructions) and keep them in a airtight container or freeze.
  4. To serve, unwrap and turn onto a platter. Strip off the cling film and serve topped with the chocolate curls.
Try

Orange semifreddo

Omit the coffee and Tia Maria and replace with the zest ½ orange and an orange liqueur like Grand Marnier. Use dark chocolate instead of Toblerone.

    Can anyone advise me where to get hold of Honeycomb Toblerone? Toblerone website suggests Asda, Tesco, Waitrose and Sainsburys as stockists, but none of them have it in stock.

    This is a delicious recipe - so easy to make and very tasty. It's perfect for a dinner party and can be made the day before the event! I made the brandy version for Christmas Day's dessert and it went down a treat.

    Made both the coffee and the Grand Marnier, but the Orange flavoured won "hands down", definately my favourite boozy dessert! Couldn't find honeycomb toblerone either, so improvised with "Chocolate orange segments" Yuuummmeeee!!!! Suppose you could experiment with different flavoured chocolates, and liquers, the options are endless

    Extremely tasty, we all had seconds. The chocolate does need to be chopped finely or it sinks - I will grate it next time. I also whipped the egg whites too stiffly so they were hard to fold in and I ended up knocking some of the air out so will whip to softer peaks in future. I used goats double cream (from waitrose) to make it dairy free for some lactose intolerant friends and it worked really well.

    Have made the coffee version a couple of times now and its delicious. Omitted the choc. curls and just grated some choc on top instead. Be careful not to leave out too long as it melts very quickly. Going to try with vanilla and strawberries or raspberries on Sunday for Easter pudding so the young ones can share - begrudgingly!

    i used good quality milk chocolate and a crunchie bar.honeycomb toblerone are hard to come by (and expensive) where I live. I substituted the brandy for orange juice (coffee + orange juice created an irresistible flavour!). overall, it was a great and easy recipe and the family just loved it!

    I made this for a family gathering and it went very well, even with my mother-in-law that went for seconds, something she rarely does! I'm not much of an expert, so it was very messy trying to put together, everything kept splashing on the walls when using an electric whisk I'm not used to. I used a shallow round tin so the chocolate chunks would distribute evenly after seeing them sink in the suggested loaf tin. I thought it was a bit too sweet, I think next time I'll use less sugar and maybe even use dark chocolate instead of milk chocolate.
