Cheese & bacon lasagne

Method

  1. Fry the onions in the oil for about 15 mins until golden. Add the oregano and bacon and fry for 5 mins more, stirring frequently. Tip in the tomatoes, season and bubble uncovered for 5 mins. Remove from the heat and stir in the basil.
  2. Meanwhile, make the white sauce. Pour the milk into a pan and tip in the butter and flour. Whisk continuously over a moderate heat to incorporate the flour, then simmer, stirring until thickened. Season with salt, pepper and nutmeg.
  3. Spoon a third of the tomato sauce on the base of a lasagne dish. Top with a third of the lasagne sheets. Then top with a third sauce, a third lasagne, the last of the tomato sauce and finally the last sheets of lasagne. Pour over the white sauce and scatter with the cheese and an extra grating of nutmeg. Chill. If eating straight away, bake at 190C/170C fan/gas 5 for 40 mins until golden and bubbling. Scatter with basil, if you like, and serve with a salad and garlic bread.
  4. To freeze, cool completely, then wrap in cling film, then foil. Will store for 3 months. To serve, thaw for 6 hrs in a cool place. Unwrap and bake at 190C/170C fan/gas 5 for 50-60 mins until thoroughly heated through.

    this didnt work for us at this quantity, usual recipe for lasagna for us means eat half, freeze half for another time, i found this didnt reheat 2nd time round, will do sauce again and use with fresh pasta next time

    We absolutely loved this - even my bacon hating daughter scraped her plate clean (told her it was ham), also I put mushrooms in which seemed to add extra flavour. There was enough for a couple of meals which we have just reheated and eaten tonight - maybe we are not very fussy, but it tasted fine to me.

    A good standby recipe - easy to make and great for families. I halved the recipe and it made plenty for 3 adults - made the day before and kept covered uncooked in the fridge - it cooked really well and had a good flavour. A lighter lasagne and not as oily as some I have eaten. I did use dried lasagne sheets - half a pack (about 8 sheets) for the half recipe but decided to pre-cook the sheets to keep it moist. Im adding the recipe to my 'tried,tested and enjoyed' !

    I bulked it up with some carrots, mushrooms and peppers and put some extra cheddar on the top. Delicious and cheap!

    It was ok but I wouldn't say it is any cheaper to make than beef lasagne. Faster yes. Found myself thinking how much nicer it would taste with a bit of mince!

    this was my first lasagne and it was great. looked really tasty and was. Very easy to make, it has become a regular feature at our dinner table. I even make more white sauce as it's my favourite bit!

    This dish has become one of my regulars. It's so tasty, and I actually make this more frequently than a 'traditional' lasagne mainly because it's so straightforward and easy. You absolutely must get the best quality bacon you can though.

    I've made this numerous times now, always with great success. I halve the quantities to fit the dish that I have and it works well. I also add mushrooms for added flavour

    Absolutely delicious! I used dried lasagne, pre-cooked it in some boiled water and then kept the sheets with a little olive oil between to stop them sticking. I also added some garlic and cheddar cheese and lots of black pepper to the white sauce (made a roux first couldn't bring myself to throw it all in the pan together!) - I sort of halved the recipe using what I had and it fitted perfectly in the lasagne dish I have. Will definately be making this one again!

  • 3 large onions , halved and thinly sliced
  • 3 tbsp olive oil
  • 1 tsp dried oregano
  • 300g pack lean smoked back bacon , chopped
  • 2 x 400g cans chopped tomatoes in rich juice
  • 20 basil leaves , roughly torn, plus extra to serve if you like
  • 250g pack fresh egg lasagne (check pack for cooking instructions)

FOR THE WHITE SAUCE

  • 600ml milk
  • 50g each butter and plain flour
  • generous grating fresh nutmeg
  • 50g grated Parmesan
