Method

  1. Tear the bread into a large mixing bowl and add the fruit, peel and spice. Pour in the milk, then stir or scrunch through your fingers to mix everything well and completely break up the bread. Add eggs, muscovado and lemon zest if using. Stir well, then set aside for 15 mins to soak.

  2. Heat oven to 180C/160C fan/gas 4. Butter and line the base of a 20cm non-stick square cake tin (not one with a loose base). Stir the melted butter into the pudding mixture, tip into the tin, then scatter with demerara. Bake for 1½ hrs until firm and golden, covering with foil if it starts to brown too much. Turn out of the tin and strip off the paper. Cut into squares and serve warm.

Such a lovely recipe,with the added bonus that you can swap the ingredients if you do not have them all.
I always put a spoonful of marmalade in as an extra.Next time I am going to try soaking the fruit in rum.This recipe is a big hit with friends and family.

Would very much appreciate some advice, please. Firstly, when making this do you remove the crusts from the bread? Secondly, if I were to make with fresh bread would it be better to leave it and let it go slightly stale, say for three days after purchasing before making it? Sincerely hope someone out there can help answer my questions.

I just made it for my cheeky Xmas Party at preschool. I also made a small one for my self. It is a LOVELY recipe!! And like any good recipe you can adapt it to suit your taste. I used 275g of mixed fruit (raisins, sultanas and currants), and soak the fruits in half of the milk for 30 minutes (they was so juicy! and soft). Only 50g of peel. I also used dark moscovado sugar and I melted it in half of the milk hot and let it come to room temperature. I caramelised a tin and sprinkles desicated coconut on it. And then I baked it over a big tin with water in it. Yummy!!

This was such a simple recipe yet so delicious! I had lots of sultanas, raisins and cranberries left over from lots of Christmas baking so I threw all of them in to my bread pudding and it was a real hit with everyone who tried it. I will certainly be making it again - perfect comfort food for the winter!

Never made this before but was requested for some Bread Pudding by one of my man's work colleagues. Recipe was very simple and the verdict ...... "Divine" He was well impressed, as was everyone else who ate it.

I made this pud for my Husband as I know he likes it so much. He had his first pice today I put in his lunch box for work. I got a text message after lunch saying it was the best bread pudding he had ever tasted he gave it 10 out of 10 so it must be good !

The recipe was very nice I had no mixed peel so I used dried apricots and the zest of an orange and lemon it was enjoyed by all.

Made this today for the first time as a suprise for my bf who loves this as his parents use to bake it for him back in the day ;)

I have to say it was amazing and thats the first time i have ever tried bread puddin too!! the kids loved helping make this and i used a casserole dish to bake it as i didnt have a tin the correct size and it still came out perfect!

Served this with ice cream and the whole family scoffed it up!! i will most certainly recommend this to everyone :D:D

Made this today as we had some bread that needed using up! Tastes fab! I didn't add the mixed peel and just used a squirt of lemon juice instead. Also added cinnamon as me and my partner both love it & must say it tasted fab! :) Shall be making this again thats for sure!!

Everything went great with this recipe.
I used Cinnamon, instead of mixed spice but only as I didn't have any in the cupboard.
It is the best bread pudding I've tasted and quite a transformation of the old, tired, freezer dried bread I had been stock-piling, which was the only reason I decided to make this, to get rid of it!!!
In my favourites now and will be made again.

Kept seeing bread pudding everywhere recently - so decided it was time to stop salivating over it and try making some!
After reading the comments I decided to only make half the amount here and as a vegan, I replaced the egg with a banana and used soya milk instead. As a couple of others have done, I used the juice of the lemon too, and I soaked the fruit in brandy - I reckon rum would have been awesome though!!
Even using half the amount it cut nicely into 9 pieces too (perhaps not as thick as it should have been, but half as bad for you!)!!
