  1. Tear the bread into a large mixing bowl and add the fruit, peel and spice. Pour in the milk, then stir or scrunch through your fingers to mix everything well and completely break up the bread. Add eggs, muscovado and lemon zest if using. Stir well, then set aside for 15 mins to soak.

  2. Heat oven to 180C/160C fan/gas 4. Butter and line the base of a 20cm non-stick square cake tin (not one with a loose base). Stir the melted butter into the pudding mixture, tip into the tin, then scatter with demerara. Bake for 1½ hrs until firm and golden, covering with foil if it starts to brown too much. Turn out of the tin and strip off the paper. Cut into squares and serve warm.

This is a wonderful recipe, my elderly mother and neighbours say it's just like the one that thier mothers used to make! I also add a handful of chopped walnuts which give an extra dimension and always goes down well. If I had a deli I would be making this and it would be flying out the door!!

Fab pudding. Take the time to squish this through your fingers when mixing. First I used a knife to really break up all the bread crusts with just the milk and spice, then added the fruit and squished it for about two minutes. Got rid of all the lumps of bread and then a good soaking for about half an hour. Came out of the oven really nice.

I had to re-jig the recipe a bit, no peel, 1 egg, and some single cream to make up the milk quantity, and no lemon, but it turned out a dream, and will definitely make it again and again

Great bread pudding recipe. We have tried several before this making this one. This far the best recipe for bread pudding we have discovered, everyone who tries it falls in love with it and asks for the recipe.

I have been looking for a recipe for bread pudding for so long, I was brought up on it, in a time when bread had no preservatives and would be stale very fast , my Mum scalded the bread in boiling water first, we ate it hot with custard but just fab cold too.

My Nan used to make the best bread pudding EVER! Sadly, I never got the recipe off her before she passed away. I've spent the last 30 years trying every recipe imaginable and I've bought bread pudding from every possible outlet. None could touch my Nan's delight. Until now!! This recipe is spot on! I stumbled across it a few of weeks ago - and am making it for the 5th time today! I never have enough leftover bread - so buy bread especially - and I find the supermarket 'value' loaves do just as good a job as any other.

My family love this, our chickens don't because they used to get our old bread crusts. Now they get frozen until I have enough to make a bread pudding, although I have to confess to occasionally making or buying bread especially - it is so popular!

Had freezer failure so lots of rolls to use up and searched for recipe for bigger than usual bread pudding and this one came up. Increased ingredients by 25% (and added dried cranberries) resulting in a delicious, crispy topped pudding. Fabulous so will do again.

Loved this recipe. Had lots of crusts of good quality bread as I had made finger sarnies recently for an event. I only had 350g of bread so I reduced other ingredients proportionally, including the cooking time. Turned out really well. Nostalgia.

This was excellent, I only had about three quarters of the amount of bread required in the recipe and I added about 50g extra of dried fruit, keeping all the other ingredients the same as the recipe and it was super. One to keep doing again and again!

Great recipe and very easy! Didn't have enough dried mixed fruit in my cupboard so added a mix of dried tropical fruit and it worked well. This is one of the only cakes my one fussy son will eat and he loved it!

My Family LOOOOVE bread pudding and this is the easiest and best recipe I have found. I've made this numerous times now. I sometimes change the dried fruit I put into it, dependant on what I have in the cupboard (eg dried cranberries, blueberries etc). I've also used orange zest instead of lemon before and it works just as well. Thank you for this recipe, it rocks!!

Made this for an outdoor fund raising event and it was VERY popular, made double quantities and every bit went, quantity made more than stated too, bargain. Ran out of white bread so used granary to top it up. An excellent and forgiving recipe.

Love this recipe. Like others, I found it too much for the 8" (20cm) square tin, so used a 2 lb loaf tin as well. My son visited, and turned up his nose at the thought of bread pudding, until he tasted it, then took half of it home with him! Less calories for me :)
