Warm salad of chickpeas, feta & spinach

Try this fresh, slightly spicy salad for a light supper at any time of the year

Method

  1. Warm the chickpeas through in their liquid then drain and toss with the onion, cumin, chilli, 3 tbsp olive oil, and vinegar.
  2. Scatter over some spinach leaves, then sprinkle with the feta and parsley.
