Chicken & pistachio pilaf

Throw some chicken and rice into a pot with aromatic spices and sour cherries for a low-fat feast

Method

  1. Heat 1 tbsp of olive oil in a large, heavy pot. Add the onion and season. Cook for 12-15 minutes until very golden and crisp at the edges. Remove half the onion, drain on kitchen paper and set aside. Add the chicken, cherries, allspice, and cinnamon, and cook for 5 minutes. Add the rice along with the stock, bring to a boil then reduce the heat and simmer with a lid on for 12 minutes until the liquid is all absorbed.
  2. Stir the nuts through and scatter over the crispy onions. Serve with a dollop of natural yogurt, if you like.

    A nice enough dish. Easy to make,nice flavour, but not enough to be one of my favourites. I found the taste of the cherries too intense. It goes very well, but I found it overpowering when I bit on one.

    I liked this rather more than my husband did so hence only four stars. So quick to put together and make You avoid the intense cherry flavour if you chop them up relatively finely. I quite like the sudden burst of cherry flavour. however The advantage of this dish is that it is so easy. I was baking for a fair and just kept an eye on it without being too distracted. Chicken thighs stay nice and moist too. Do consider you need a good dollop of Greek yogurt with it.
