Sicilian-style fish stew

Give midweek suppers a taste of Italy with this super speedy, low-fat one-pot

Method

  1. Heat 1 tbsp of olive oil in a wide, shallow pan. Add the onion, celery, garlic, anchovy (if using) and chilli flakes. Season and cook for 10 minutes. Add the tomatoes and cook for another couple of minutes. Pour in the wine and stock and bring to a boil. Cook for 2 minutes then add the couscous. Turn down to a simmer and add the fish. Cover with a lid and cook until the fish is done, about 5-7 minutes.
  2. Divide between 2 dishes, breaking the fish into large pieces. Sprinkle over lemon zest and parsley to finish.

    Mmmmm. Used a selection of fish - smoked haddock, salmon, white fish - as sold in supermarket. Lovely.

    Loved it... and very healthy! But is 50g of cous cous right? I used 100g for two portions and it was just enough.

    Really easy,great recipe. I found it much too salty but I did add about half tin anchovies. Next time I'll try less-but I'll definitely cook this again!

    Really yummy! only did it for one so halved everything but accidently didnt half the couscous but 50g for 1 was a good amount. Used tin tomatoes and the texture and consistency was lovely.

    This is a great recipe! an excellent starting point for your own perfect dish. I found this better with four anchovies as opposed to just one and a few Bird Eye chilli's give a nice little kick. I also used giant cuscous for more texture.

    Absolutely lovely! Very tasty. As recommended by the other users I added a tin of plum tomatoes and it looked exactly like it does in the picture. Leftovers were heated up the day after for lunch and were just as scrummy. I might try adding a few prawns next time as well.

    I added half a tin of chopped tomatoes, less stock and a 100g packet of spiced couscous. I also added a whole tin of anchovies and in spite of my husband saying he didn't like anchovies. he absolutely loved it. Had crusty bread on the side. Would definitely make again. Flavours were lovely.

    Really enjoyed this and so did my partner. I added tin tomatoes as suggested and swapped the couscous with quinoa, but it still worked well.

    Lovely, but having read the comments add a whole can of cherry tomatoes and 100g couscous (same amount of stock and wine) plus extra fish. Perfect consistency and enough to feed three of us.
