Sicilian-style fish stew

Give midweek suppers a taste of Italy with this super speedy, low-fat one-pot

Method

  1. Heat 1 tbsp of olive oil in a wide, shallow pan. Add the onion, celery, garlic, anchovy (if using) and chilli flakes. Season and cook for 10 minutes. Add the tomatoes and cook for another couple of minutes. Pour in the wine and stock and bring to a boil. Cook for 2 minutes then add the couscous. Turn down to a simmer and add the fish. Cover with a lid and cook until the fish is done, about 5-7 minutes.
  2. Divide between 2 dishes, breaking the fish into large pieces. Sprinkle over lemon zest and parsley to finish.

    absolutely love this recipe, turns out more like a soup though but it still very tasty. Add loads of lemon juice on top and parlsley. No it doesn't look anything like the picture though but still tastes fantastic which is the main thing!

    Great recipe! I incorporated the suggestions made by other people by increasing the amount of anchovies, using tinned cherry tomatoes and adding black olives all delicious! I also added more couscous to make it a slightly thicker stew. All in all a great success and definitely one to be repeated because it's so quick and easy and tasty.

    Now a favourite. I added more couscous, used tinned tomatos and anchovies as above. But also added beans and I squeezed the lemon in, not just using the zest. Seasoned with lemon pepper and italian herbs. Also added abit of oyster sauce in :) SO GOOD!

    Love this recipe! I slipped slightly with the chilli, so if your not a fan of spice then I'd ease up, or forgo this altogether-but otherwise delicious!

    I thought this was delicious! I doubled the quantity of fish as the amount stated looked far too small. I also used more anchovies than stated - partly because I didn't know what to do with the rest of the tin! I will definately make this again...and again..

    This recipe is delicious! We make it all the time and everyone always wants the recipe. Sometimes, I don't have celery so just use the onion and other times, I use cherry tomatoes for a sweeter more juicy flavour.

    We loved this recipe. Made for 4 of us. Doubled the ingredients and took in everyone's comments. I add extra coucous, juice from tinned plum tomatoes, lemon juice as well as the zest and the result was marvellous. My family love sauces, so the extra juice was a bonus. Will have with crusty bread next time.

    Delicious recipe- will be doing it again! Mine also wasn't very red looking, and also a bit too liquidy. Next time I will definitely cut down on the liquid. Lovely flavours though! Also, surely it can't be 2.5g of fat per portion, for two people, if its using a whole tablespoon of oil! Must be a typo somewhere- either use a teaspoon of oil (2.5g of fat per serving), or its going to be 7.5g of fat per portion if you use a tablespoon. Still, YUM YUM :o)

    Yummy! Really liked this recipe. So easy to make, too! I wasn't going to use the lemon zest, as i thought it was a waste, but am glad i did! It gave the stew a fresh taste. I also used a squirt of the juice, too.
