Ingredients

  • 250g jumbo oats
  • 50g desiccated coconut
  • 25g dark muscovado sugar
  • 50g pumpkin seeds
  • 100g mixture of chopped Brazil nuts and whole raw cashews
  • 250g packet ready-to-eat tropical fruit
  • yogurt, fresh blueberries, sliced banana and honey to serve (optional)

Method

  1. Preheat the oven to 200C/Gas 6/fan oven 180C. Put oats, coconut, sugar and pumpkin seeds on a large baking tray with sides, ideally nonstick. Mix in sugar and break up lumps with fingers, then add nuts.

  2. Bake for 15 minutes, stirring every 5 minutes, until sugar starts to melt and nuts are lightly toasted. Tip into a big bowl and leave to cool.

  3. Snip bite-sized pieces of tropical fruits into the mixture. Serve with chilled milk, yogurt and fruit

  4. Store for up to 2 months, airtight.

I am rating this again, almost 6 years on from my last rating. I make this muesli all the time and vary it with different nuts and dried fruit etc. I often give as gifts when I go to friends houses. I put it in a nice glass jar (usually Ikea) and tie with ribbon. Makes a nice change from flowers or cookies. One of my friends said it was the best muesli she'd tried. You can't beat home made grub :-)

This was delicious and I am making it again today. It is a great way to use up seeds, dried fruit and nuts near the end of their shelf-life, as you can substitute for the ones in the recipe. I added a little more sugar too (40g instead of 25g). So much nicer than shop bought varieties.

So simple to do and keep so there is no excuse for not having a healthy, nutritious breakfast. Also lovely with thick yoghurt as a dessert!!
