Creamy linguine with prawns

This delicious recipe is ready in a flash yet special enough to serve friends too. Add fresh crab and sliced red chilli for a treat

Method

  1. Cook the pasta. Meanwhile, heat the oil in a pan and gently fry the garlic for 2 mins. Tip in the wine and bubble over a high heat for 1 min, then lower the heat and stir in the crème fraîche and lemon juice. Season to taste with salt and plenty of black pepper. Simmer for 1 min to reduce a little, then add the prawns and simmer in the sauce until just pink.
  2. Drain the pasta and tip into the sauce with half the chives. Use tongs to mix everything together. Divide between 2 shallow bowls and sprinkle with the remaining chives.

Special fish mornay

Put 2 thick fillets sustainably caught haddock into a small baking dish. Make the sauce as before, using just a splash of wine, with 4 tbsp crème fraîche. Don't worry about cooking the prawns through. Scatter with the chives and a good handful grated cheddar, then grill for 15-20 mins until bubbling and fish is cooked through. Serve with crusty bread.

    I tried this out for a quick family meal by doubling the ingredients. It was lovely and the children were virtually licking their plates! Best of all it was soooo quick to make. Next time I may replace a little of the wine with stock. It is definitely special enough to serve when friends come served with a salad and fresh bread.

    I was disappointed with this actually - I think I put too much lemon juice in though as that was the overwhelming flavour. So if you try it, maybe add a bit at a time and taste.

    I think it was a little too tart with the creme fraiche and lemon together, so much so I binned the first batch! The second try, I doubled the garlic used a little lemon and zest and added single cream instead of creme fraiche and it was SO much better. Also added some clams and squid along with the prawns. Def one for an easy but impressive dinner party main!

    I make a version of this but use more garlic. Sometimes add parsley instead and have also added either mussels or indian squid tubes. If you have a lot of courgettes grate courgettes at the last minute.

    I was really disappointed with the result :( I only put abit of lemon in but even then it was way too lemony!! Next time Im going to add less lemon & some light philidelphia cheese instead of the cream fraiche. Recommendation: Light philidelphia, prawns or salmon, dill, asparagas, chilli seeds & linguine :)

    I followed this recipe to the measurement and the second, and I was so disappointed. 100ml is FAR too much white wine. It should be called white wine pasta with prawns. Even with the smallest amount of lemon juice it would have been too over powering and acidic.

  • 2 tsp olive oil
  • 1 garlic clove , finely sliced
  • 100ml white wine
  • 2 tbsp reduced-fat crème fraîche
  • juice ½ lemon (or to taste)
  • 2 handfuls (150g) raw peeled prawns
  • small bunch chives , finely chopped
