One-pan chicken couscous

This satisfying yet superhealthy recipe is all cooked in one pan for minimum washing up

Method

  1. Heat the olive oil in a large frying pan and cook the onion for 1-2 mins just until softened. Add the chicken and fry for 7-10 mins until cooked through and the onions have turned golden. Grate over the ginger, stir through the harissa to coat everything and cook for 1 min more.
  2. Tip in the apricots, chickpeas and couscous, then pour over the stock and stir once. Cover with a lid or tightly cover the pan with foil and leave for about 5 mins until the couscous has soaked up all the stock and is soft. Fluff up the couscous with a fork and scatter over the coriander to serve. Serve with extra harissa, if you like.

    Family loved this one! Maybe added too much ginger. Served with Wholemeal Pitta's which gave it a lovely touch! Yum.

    Very very tasty. I made this exactly as per the recipe. I took mine to work to have for lunch along with my ham salad. I took an extra tub with me for all my colleagues to try - they really enjoyed it.

    I would agree that this dish is lacking in something. I was very pleased that my 2yr old ate it as it is sometimes difficult to get anything other that nuggets and chips inside him. But I would agree that it needs something else just to pick it up. I'm also pretty sure that there is a bit missing in the recipe's instructions. After step 1 I took the pan off the hob before adding the last of the ingredients as in my experience couscous doesn't need cooking, it just needs to soak. This way I didn't experience any sticking or burning at the bottom of the pan.

    I love this recipe! I'm single, so I make half quantities to serve 2 instead of 4. The other half makes a lovely cold lunch the next day. Quick and easy! :)

    had it last night loved it, didnt use chickpeas, harissa or apricots as I didnt have any in but used sultanas and added some chargrilled asparagus and courgette that needed using up it was delicious doing it the same way next week! with extra sultanas.

    My husband & I just loved this dish! The ingredients were cheap to buy, it was so simple to make and then finally, it tasted delicious! However, taking my first mouthful I commented that it definitely needed a crisp side salad to compliment it! Enjoy, we did!!!

    Had this made for me last night, really tasty, really easy, loved it, very spicy for me (and that was with only 1tbsp of Harissa!) but Greek Yoghurt on the side cooled it nicely. Will def have again and pretty healthy too.

    Absolutely love this. Very quick and easy and the cold leftovers taste even better the next day. Wonderful meal before we go to the gym as it is very light.

    I used potato and carrot instead of apricots and swapped the coriander for basil. Was really nice (would perhaps use less harrisa and more stock next time)
