  • 3 garlic cloves, crushed
  • good chunk fresh root ginger, grated
  • 1 red chilli, deseeded and chopped
  • 1 tbsp soy sauce

  • 1 tbsp oyster sauce

Method

  1. Mix together the garlic, ginger, chilli, soy sauce and tomato purée, then add the chicken and leave it to marinate while you prep the rest of the ingredients.

  2. Boil a large pan of water, add the noodles, broccoli and carrots, then cook for 4 mins before draining.

  3. Heat the vegetable oil in a wok, tip in the chicken and its marinade, then stir-fry for 4-5 mins until cooked. Toss in the noodles, vegetables, beansprouts and spring onion to warm through, then mix the oyster sauce with 2 tbsp water and stir this in just before serving.

Healthy and easy to make but very bland. I would suggest juice of a lime in marinate might help give it more flavour. Or keeping the seeds in with chilli

Didnt quite have all the ingredients I U sed beef instead of chicken and increased the amount of soy sauce and chilli. Great quick marinade and a great asty dish

I made this, I omitted the chicken and lay crisp Chinese pork on top (recipe can be found on here) with dipping sauce.
It was very popular and I will be making it again.
I advise you all to try it drizzle the dipping sauce over the pork before serving.

no tom puree at home.. can I use tom sauce?!

I do my own which is close to this recipe. I also add mushrooms sesame oil. Plus I marinade with chinese 5 spice. I don't use tom puree...

After reading comments I added extra chilli, ginger and soy sauce, I also had the time to marinade the chicken for longer. And we loved this, fresh with a kick and very easy!

It was alright. Like the others have said, it's a bit bland, but you can add more soy sauce or whatever for more flavour. Would probably have it again.

Delicious but would make more sauce, use more chicken and less bean sprouts next time. Prepared the veg and marinaded the chicken earlier in the day when I had more time; easy to throw together when ready to eat.

Really yummy, simple stir fry. Added more ginger, chicken and chilli though after reading the comments. Halved the portions for two but it was still very generous !

I found it disappointing - far too many noodles and not enough chicken. The marinade was delicious though and I plan to use it as the base for a simple stir-fry.
