Quickie sausage goulash

Rustle up a quick low-fat sausage meal - a perfect midweek family-filler

Method

  1. Heat 1 tablespoon of the oil in a large saucepan and fry the sausage chunks until evenly browned. Remove from the pan and set aside.
  2. Mix the remaining oil with the onions in the pan and cook over a high heat, stirring occasionally, for 5 minutes or until the onions are golden brown. Pour in the tomatoes, stirring in the bits from the bottom of the pan, then add the tomato purée. Fill the can up with water twice and pour the water into the pan. Sprinkle in the bouillon powder, paprika and sugar and plenty of salt and pepper. Stir well and bring to the boil.
  3. Tip the potatoes into the pan, cover and simmer for 10 minutes, stirring occasionally.
  4. Drop in the shredded greens and sausages and gently heat for 5 minutes or until the greens are tender. Taste for seasoning before serving.

    Too much water added - If I make it again I'll only add half the amoung and I might add some chilli to give it a bit of kick - it's a little bland

    Me and my boyf always make this together and its v yummy with warm crusty bread, and also v filling. Instead of using tomato puree and sugar, use a squirt of ketchup instead, it's pretty much the same thing!

    I thought this was very tasty though I used pork and apricot sausages instead of the low fat variety which are not good. If your watching your weight like me have less sausage and more veg

    I've made this meal several times, but i tend to add more herbs in it, I'm making it tomorrow and was thinking of putting a red chili in it to give it a nice kick. its nice served with hot bread.

    The recipe needs a bit of work, low fat sausages dont give a lot to a dish in general so need to add depth. To keep the calories down yet add flavour, still use lowest fat pork sausages, use red onions, add 2 red peppers (one chopped as the onions the other added as chunks). I add mushrooms instead of the potatoes. It could be served with a jacket potatoe, however mash is good to soak up all the lovely juice. Oh and yes add one tin of water initially - you can always add more.

    I used weight watchers sausages (which were surprisingly good) and added carrot, green pepper and plenty of garlic. I substituted smoked paprika and cooked it all for quite a bit longer than stated and the result was very tasty indeed. So with some tweaks I would recommend this.

    Read all the comments above and took them on board. Firstly added peppers and mushrooms to the recipe, doubled the paprika, added tomato puree and cooked for a lot longer so that the liquids were reduced and the flavours intensified. Lovely meal which the kids really enjoyed, even if it was a little 'spicy' according to them!

    We all really enjoyed it, although as previous comments have said, there was a bit too much liquid. I ended up cooking the potatoes for an extra 5 minutes uncovered before adding the sausage and then cooking that for an extra 10 minutes on top of that stated. Used normal fat sausages and left out the cabbage as none of us are fans. Found it had loads of flavour, but perhaps that was down to the hot paprika rather than normal and the type of stock I used. Will be doing it again. So very simple. Will not put in as much water next time, though!!

    I m a proper hungarian, I love this site, but I never heard of this recipe! I have travelled all around hungary because I have a big family, but no one has heard of sausage goulash...sorry!

    Luuuvely! I used 500ml of stock instead of the water and powder. I also added 2 cloves of garlic, 70g chorizo and a bit of chilli. lush.
