Bacon & fish o'leekie

A great way to get kids to eat fish - this low-fat dish is simply made in the microwave

Method

  1. Put the leeks and bacon in a medium microwavable dish with 4 tablespoons of the stock. Cover the dish with cling film, pierce the cling film with a knife and microwave on High for 5 minutes.
  2. Stir the rice and remaining stock into the leek and bacon and continue to cook uncovered in the microwave for a further 5 minutes. Gently stir in the fish chunks, cover the dish with cling film, pierce the cling film with a knife and cook for a further 10 minutes, until the fish and rice are done.
  3. Stir in the parsley, lemon zest and juice. Leave to stand for 2-3 minutes and serve straight from the dish.

    Very easy to make, but was overpowered by the lemon, will make again using less lemon. Might also include some mussels or prawns

    This dish is very quick and easy to make, I will make again but like KathrynMag I will use less lemon because it does tend to dominate the other flavours.

    This sounds great but none of the supermarkets in my area sell American easy-cook rice. would any easy-cook rice suffice???

    Well i have noticed on this site another recipe very similar to this called Fish o'leekie and this uses Basmati rice, i have this in the cupboard at home so i will give it a try using this instead of American easy cook rice. Im making it tonight so i will be back to let you know how it went, i have taken note on the lemon quantity so will use less than recipe states. x

    I've cooked this lots of times - quick, easy, tasty and healthy. I often add more veg into the dish to steam along with it about 1/2 way through cooking. Small broccoli florets and chopped green beans work well. So do frozen peas and sweetcorn.

  • 1 leek , finely sliced and washed
  • 100g smoked back bacon , chopped
  • 500ml hot vegetable stock
  • 300g American easy-cook rice
  • 500g cod or haddock fillet, skinned and diced into large chunks
  • 3 tbsp fresh parsley , chopped
  • grated zest and juice of 1 lemon
