  1. Dry-fry the sausage meat in a non-stick pan for 8-10 mins until browned, breaking it up with a wooden spoon, then remove and set aside. Fry bacon and mushrooms for 5-8 mins until golden, return the sausage meat and keep warm.

  2. Cook the pasta following pack instructions. Make the sauce by beating together the Parmesan, egg yolks, most of the parsley and the crème fraîche. When the pasta is cooked, drain, reserving a ladle of the cooking water.

  3. Combine the pasta and meat mixture over a low heat and add the sauce. Season and quickly mix, adding a splash of cooking water if it’s a little thick. Spoon into bowls and eat with the extra Parmesan shavings and remaining parsley on top.

Lactose free here so used unsweetened soya milk and lacto-free cheese instead of the dairy counterparts in the sauce. Also didn't use bacon as thought it would be too salty for my toddler - replaced with onion, courgette and peppers to up the veggie content. Pleased with the creamy sauce instead of the usual tomato. Also only had three sausages and it was fine! Yum.

This was okay, but I found it a bit bland - too claggy with not much other flavour. Maybe won't be making again.

Lovely! The only reason I didn't give it 5 stars was because I would increase the 'sauce' to pasta ratio next time. It was very straightforward to make gluten-free - an extra bonus!

Wery tasty, I wasn't sure if cream and sausage goes together but it does, I added twice the amount of cream and threw in cayenne pepper, other than that I didn't change a thing, will definitely make it agan!!

I made this for 2 this evening and it was quick, easy and went down very well. I used half the amount of pasta but kept the mushroom and egg/sauce quantity the same. I also used a few spring onions and a yellow pepper instead of the bacon. I did use the same amount of sausage but my son loves his meat!! They were ordinary low fat supermarket sausages so nothing special but this was a great midweek supper. Will definitely make again and went down very well wtih my son who likes pasta but really doesn't care for tomato based sauces.

This was a gorgeous recipe packed woth lots of flavour and so quick and easy to make. I think th echoice of sausage would contribute to the flavour and I didnt really measure the cheese as we love parmesan. Only mad it 3 days ago and requested again for dinner tonight,happy to oblige! May add some spinach for extra veggies .

Brilliant recipe! Very delicious. Although I changed the Parmesan to Gloucester cheese and the eggs/creme fraiche to cream cheese and I also added some leeks. Gorgeous dish! :)

Yummy! I can't help feeling that this is a bit on the fatty side for a mid week supper, but it's certainly quick and delicious. I didn't have a huge amount of mushrooms so used some very finely diced celery and peppers to bulk out - worked well. Also substituted Parmesan with cheddar and creme fraiche with low fat natural yogurt. Recommended!

Excellent midweek mea, tasty ad substantial. I substituted the bacon with turkey bacon and the creme fraise with goats yoghurt and the parmesan with a hard goats cheese and I used chicken sausages because my husband has a specia diet. It was very tasty!!!
