Mushroom & sausage pasta

An easy pasta dish which will see you through many a midweek meal

Method

  1. Dry-fry the sausage meat in a non-stick pan for 8-10 mins until browned, breaking it up with a wooden spoon, then remove and set aside. Fry bacon and mushrooms for 5-8 mins until golden, return the sausage meat and keep warm.
  2. Cook the pasta following pack instructions. Make the sauce by beating together the Parmesan, egg yolks, most of the parsley and the crème fraîche. When the pasta is cooked, drain, reserving a ladle of the cooking water.
  3. Combine the pasta and meat mixture over a low heat and add the sauce. Season and quickly mix, adding a splash of cooking water if it's a little thick. Spoon into bowls and eat with the extra Parmesan shavings and remaining parsley on top.

Make it veggie

For a vegetarian alternative, replace the meat with an extra 300g mixed wild mushrooms, fry until brown and use a vegetarian Parmesan.

    Brilliant! I swapped the parmesan cheese for grated mozerella as I'm not a fan and this was delicious and is now my top pasta dish

    Tha made a nice change from the many tomato based pasta dishes my family endures! We all enjoyed it. I used our homemade sausages from ournhome reared pigs and it was delicious!

    Did this for tea last night, it was lovely! I really liked the 'sauce', it was a lovely texture, and tasted really good. I would definitely do this again.

    As Heather says, the 'sauce' is really good, very different and I think would work well with other dishes too. Great because the ingredients are store cupboard standbys and very quick and easy to do. I added some peas to the pasta just before the end of it's cooking time just to add some colour. We didn't have any parsely, but basil did just as well. Will definitely become a mid-week regular.

    Added some sliced corgette to the mushrooms and meat (fried all together). This made a bit more juice so needed to fry for longer, but this is what i intended as i like crisper bacon... REALLY loved this recipe. One of the best finds on here. Not my usual kind of thing but tasted excellent and very easy to do.. in fact i had more trouble making a salad to go with it than this pasta dish!!

    I left out the bacon and used italian sausages. The sauce was VERY delicious and SO easy. It has given be the confidence to make a low fat "carbonara"

    This one didn't work for me. No depth of flavour in the sauce and I felt it lacked an extra element. Also, the colour wasn't very appealing.

    I was really surprised how delicious this was! Used home made sausages and added a red pepper and caramelized an onion. Will make again and again.

  • 4 bacon rashers , diced
  • 200g mushrooms , chopped
  • 350g pasta shapes
  • 50g parmesan , grated, plus extra shavings to serve
  • 2 egg yolks
  • small bunch parsley , finely chopped
  • 2 tbsp half-fat crème fraîche
