Courgette carbonara

Method

  1. Cook the pancetta in a dry, non-stick pan until crisp and golden (it'll give off enough fat to cook itself). Add the courgette and garlic and cook for 8 minutes or until the courgette is softened. Whisk the egg, cream and Parmesan and season with pepper. Cook the pasta following the pack instructions, then lift out of water with tongs straight into the courgette pan.
  2. Toss well over the heat then take off the heat and toss with the egg/ cream mix, adding 2-3 tbsp of the pasta water until you have a nice emulsified sauce.

    Very easy and very quick for a mid week supper. Didn't bother with the egg - just used creme fraiche and topped with toasted pine nuts and parmesan.

    This was super easy and delicious! Whipped it up while having a few beers on a Friday evening and it went down a treat with a simple side salad. The zucchini made the traditional recipe more interesting, but I doubled the egg yolk and halved the cream to keep it closer to the original. Loved it, will make it again.

    My partner made this for me as I was going to be home late. It was quick, easy and absolutely delicious. This time we used ordinary bacon-next time we will use pancettaand add a few mushrooms and a little onion. It's staying on the menu list for sure.

    Didn't add the egg (forgot!) and used smoked streaky bacon in place of pancetta. A surprisngly very tasty dish giving an alternative way to serve the glut of courgettes from the garden.

    Huge family favourite especially when we had a bumper crop of courgettes.I omit the bacon for veg bacon for the vegetarians in my family and we all enjoy the meal together.

    Grated courgette - what a great idea and twist to a Carbonara! I think the ones I used were two large but they did wilt down a bit. I also doubled the pancetta, parmasan and pasta (penne), added a few left over mushrooms and used double cream (as that was what was in the fridge) and it was immense. A new favorite in our house but might try it with Crème fraîche next time to lower the calories I used on this occasion.

    This dish is absolutely fantastic and easy to cook. I always add chicken thigh and smoked lardons to boost the flavours. It doesn't heat up the next day so well as the eggs go a bit weird....but it never puts me off.
