Crisp chicken with Parmesan & prosciutto

Give a midweek chicken supper a clever twist with a few slices of Parma ham

Method

  1. Gently pound out the chicken with a rolling pin until about 2cm thick then season well. Sprinkle the Parmesan over one side and wrap the prosciutto around. Heat a non-stick frying pan with a tsp of olive oil.
  2. Sear for 3-4 minutes each side over a medium high heat or until cooked through. Serve with a rocket salad.

    this is an easy and tasty midweek meal, i would only season the chicken with pepper as the prosciutto is salty enough

    Our daughter suggested a crushed clove of garlic added with the Parmesan before wrapping - good for those who like that sort of thing !

    This is a simple no fuss way of sprucing up a chicken breast. It's also great when a friend comes over last minute and you don't have much time to cook. I normally put this in an oven dish and chuck in some cherry or plum tomatoes with a bit of salt, pepper and olive oil on them, then let it all cook for about 20 mins. The juice from the roasting tomatoes stops the chicken from drying up.

    Just cooked for tea, on a bed of roasted veg as suggested. Very nice, simple meal with fresh flavours. Served with Jersey Royal Potatoes. Great mid-week meal if you fancy something a little different.
