Pimm's, lemon & mint jelly

Everybody loves jelly, almost everybody love Pimm's - what's not to love in this most British and summery of puds then?

Method

  1. Soak the gelatine in a bowl of cold water. Heat 100ml water in a pan, drop in the mint leaves and leave to infuse for 5 minutes. Take out the leaves, reheat, then stir in the gelatine until dissolved. Add the Pimm's and lemonade and cool. Skim off any remaining foam. Pour into a 1-litre jelly mould and chill overnight until set.
  2. Turn out onto a plate and surround the jelly with the traditional Pimm's garnish.

    Made for the Royal wedding party in the garden. Added touch of cointreau to the orange cream and a slice of cucumber to edge of the individeal serving dishes. Went down well, nice and refreshing.

    I used individual jelly-moulds to create a posh jelly and ice-cream plate for a dinner party, and this went down a treat! It had a great 'wobble factor' and tasted lethally strong (just how I like my Pimms!). Definitely not for children, but great fun for adults!

    We cant get leaf gelatine in the Middle East or CyprusI wish recipes would put the equivilent in powdered for those of us who can not get leaf!!

    This jelly is fantastic. We use powdered gelatine and it works well. I infused the mint in 100ml of water first, which I then dissolve the amount of powdered gelatine in which necessary to set a 900ml. I then add the Pimms and lemonade to the dissolved gelatine (subsituting 100ml of the lemonade for the water). I added chopped cucumber to the jelly mix so that it could set inside the jelly itself which added a good texture, though expect it to sink to the bottom. We have made using diet lemonade the flavour is just as good (but a little better for the waistband!) Will be making again throughout the summer!

    Gelatin (Wikipedia) - 'produced by partial hydrolysis of collagen extracted from the skin, boiled crushed bones, connective tissues, organs and some intestines of animals such as domesticated cattle, chicken, and pigs'. Who on earth eats this stuff in this day & age? Surely there's an alternative?

    You should usually be able to be vegetarian gelatine in a large supermarket, failing that Holland & Barrett or your local health food shop should have it.

    Both Dr Oetker and Just Wholefoods make vegetarian gelatine which can be used in both sweet and savoury dishes (you can buy both brands in most supermarkets or direct online from Amazon). I used Dr Oetkers in this recipe and it was just fine. Great tasting jelly, just the thing for our "expected" long hot summer in England!
