Method

  1. Heat oven to 180C/160C fan/gas 4. Heat the oil in a casserole and brown the lamb on all sides. Scoop the lamb out onto a plate, then add the onion and carrots and cook for 2-3 mins until golden. Add the garlic and cook for 1 min more. Stir in the spices and tomatoes, and season. Tip the lamb back in with the chickpeas and apricots. Pour over the stock, stir and bring to a simmer. Cover the dish and place in the oven for 1 hr.
  2. If the lamb is still a little tough, give it 20 mins more until tender. When ready, leave it to rest so it's not piping hot, then serve scattered with pomegranate and herbs, with couscous or rice alongside.

Ras el hanout, a North African spice mix, contains cardamom, cinnamon, clove, coriander, cumin, nutmeg, turmeric and black pepper. Find it in larger supermarkets, or use a mix of the spices above.

    Made this tonight for our anniversary dinner it was amazing. Swapped the apricots for prunes and marinated the meat ion the spices for an hour beforehand. Warm spiciness and great with cous cous, green salad and a dollop of sour cream. WILL DEFINITELY BE MAKING AGAIN.

    Made our own ras el hanout spice mix from internet recipe. Sadly, there was too much mixture for my 'large' Lakeland tagine pot even with 100ml less water in the stock and some spilt out on to oven floor:-( . However, all was beautifully cooked and husband and son really enjoyed it.

    Stuck to the menu except more meat added. Lamb makes it fairly expensive dish but tasted fantastic. Quick and easy to make even for inept cook like myself

    What a fantastic dish. I cooked this for a dinner party on new years eve and three of the guests including myself were not lovers of lamb but this was sensational. Great flavours and the pomegranate added a great texture to the dish. Excellent!

    This was bloomin lush! Made it for a small casual dinner party and everybody loved it. I was surprised it was quite an intensive flavour and I followed the recipe without extras. I found that the liquid wasn't reducing too well though, so cooked it with lid off for the last 20 mins (in total cooked for 1.5 hours) and stirred it frequently. The pomegranate and the apricots make the dish. Will DEFINATELY be making again and again!

    That's our new family favorite! I put some pre-cooked rice into the dish to during the last 20 minutes, absolutely delicious. Will be making this often!

    AMAZING!!!! I loved this so much i wanted to make it again the next day. I also used 2 tbsp of a tagine paste from tesco instead of the spices and it was still fab!

    Made this last night - my husband and I both loved it! I cut the lamb into small chunks and did it in a tagine in the oven for about an hour and a half.

    Fabulous recipe and so easy to make. I added dates as well as apricots, and used the sainsburys own ras el hanout. I agree that the pomegranate seeds and coriander garnish just make the dish. I will definitely be making this again, and I am looking forward to the leftovers for lunch tomorrow!

Ingredients

  • 2 tbsp olive oil
  • 500g lean diced lamb
  • 1 large onion , roughly chopped
  • 2 large carrots , quartered lengthways and cut into chunks
  • 2 garlic cloves , finely chopped
  • 2 tbsp ras-el-hanout spice mix (see tip, below)
  • 400g can chopped tomatoes
  • 400g can chickpeas , rinsed and drained
  • 200g dried apricots
  • 600ml chicken stock

TO SERVE

  • 120g pack pomegranate seeds
  • 2 large handfuls coriander , roughly chopped
