Double chocolate shortbreads

Method

  1. Mix the butter and sugar together with a wooden spoon. Stir in the flour and cocoa, followed by the chocolate chips - you'll probably need to mix it together with your hands at this stage. Halve the dough and roll each piece into a log about 5cm thick. Wrap in cling film and chill for 1 hr or for several days. Can be frozen for up to 1 month.
  2. Heat oven to 180C/160C fan/gas 4. Slice logs into 1cm-thick rounds, transfer to a baking tray lined with baking parchment and bake for 10-12 mins. Cool on the tray.

    Amazing - big hit with the children & adults!! Even though only cocoa powder really chocolately! Very easy to make - I didn't bother creaming the butter & sugar first - just chucked everything except the choc chips in the kenwood and let it do the work! Added the choc chips at the end for a quick mix and hey presto! Keep very well - if they last that long!! Don't know if the mixture will make it to the freezer.

    Absolutely delicious - made these with white choc chips as I didn't have any milk or dark choc chips. So easy and totally divine.

    Easy peasy and delicious, my daughter had a friend come around on a playdate and I realised I had nothing to offer for a treat and these were rustled up using some chocolate buttons and store cupboard ingredients. Yummy with a glass of milk :)

    Very easy and very nice! Convenient to split the dough in half and keep a bit to have fresh cookies later! Lovely dipped in milk. Only 4 stars because I found the dough a bit sandy...

    Delicious and easy. I make mine with white chocolate chunks for the colour contrast, and the fact that you can freeze some of the batch makes it ideal -I can keep the biscuit jar topped up with minimal effort. Good recipe for anyone new to home baking. Don't worry if the dough crumbles - it will cook out fine.

    I have made these again and again. They are so easy - i just chuck everything in at once. If you freeze the uncooked circles of cookie dough you can cook from frozen and get the same yummy results. Perfect for home cooked treats and the drop of a hat - or should i say visitor!

    Just made these - cooling now so not sure on taste but lovely and easy - i used white choc chips lots of them and decorated with dirzzled melted choc as they are for birthday. assuming they taste good I@m very happy with them!

    made these with my 2yr old son. after putting them in the fridge for a good 2 hours the mixture was still very creamy which made cutting them impossible so had to shape by hand, cooked well. the only problem is they are too moorish!!

    Absolutely delicious! That's the end of buying shop-bought shortbread for me :) I made 1.4 times the quantity (as I couldn't be bothered to weigh the butter and used a 250g block). Made 21 biscuits which, I expect, will be gone by this evening!

    Just made these using chopped up left over easter egg as I didn't have any chocolate chips to hand - yum! I cut them in more oblong shapes but I got close to 25 out of my mixture - perhaps they are smaller than they should be but they are perfect biscuit size :o)
