Cherry, choc & coconut tray bake

Method

  1. Heat oven to 180C/160C fan/gas 4. Line a 20 x 30cm baking tray with baking parchment. In a large bowl, mix the desiccated coconut, sugar, eggs, white chocolate and glacé cherries until combined. Cook for 20 mins until golden brown and set, then cool in the tin before slicing into bars.

    Made this yesterday. Really nice although a little too sweet for my taste, will reduce sugar to 2oz next time and not chop the chocolate quite so small. All in all a really good quick bake.

    Changed this a bit as don't like glace cherries. I used frozen raspberries and dark chocolate. Used a bit less sugar and also less chocolate. Absolutely delicious, like a really luxuriant Bounty bar!!!

    i liked this recipe however it is too sweet for my taste. next time i'll leave out the chocolate. it was strange as i have a huge sweet tooth.

    Have just whipped up a batch of this and it reminds me of my childhood! I think my tin was a tad large, so was rather flat, but would do again to be deeper.

    very easy and handy to make this try bake I personaly thought it was to sweet but my husband and mum loved it i mite try SUE's idea of frozen raspberries and dark chocolate! and a little less sugar :D but over all was a good recipe

    The handiest traybake recipe I have to date! So simple to make, and absolutely delicious to eat! Have made them on a number of occasions now and they have gone down a storm every time! Will definitely try Sue's raspberries and dark chocolate suggestion next time!

    This was so quick and easy, and will also do for our two friends who are wheat and dairy intolerant. I didn't have quite enough coconut and made it up with ground almonds, which seemed to be O.K. as it turned out to be delicious. My husband is a bit fussy about what sweet things he eats, but loves this one. I've been running off copies to give to friends, as we always share our best recipes.
