Chilli prawn linguine

An elegant, low-fat seafood dish, perfect for mid-week entertaining - very light and stylish

Method

  1. Mix the dressing ingredients in a small bowl and season with salt and pepper. Set aside.
  2. Cook the pasta according to the packet instructions. Add the sugar snap peas for the last minute or so of cooking time.
  3. Meanwhile, heat the oil in a wok or large frying pan, toss in the garlic and chilli and cook over a fairly gentle heat for about 30 seconds without letting the garlic brown. Tip in the prawns and cook over a high heat, stirring frequently, for about 3 minutes until they turn pink.
  4. Add the tomatoes and cook, stirring occasionally, for 3 minutes until they just start to soften. Drain the pasta and sugar snaps well, then toss into the prawn mixture. Tear in the basil leaves, stir, and season with salt and pepper.
  5. Serve with salad leaves drizzled with the lime dressing, and warm crusty bread.

    I added lots of lime juice and a bit of white wine to the garlic etc and when prawns cooked stirred in a small amount of creme fraiche, basil leaves and more lime, amazing and so easy.

    Absolutely delicious! Stuck to the recipe this time. Quick and easy to cook but not on the plate long enough. Could have drunk the lime dressing from a glass.

    very good and i made it for my dad who said it tasted delocious. i did however burn the chilli which stunk the whole house out making us all cough.

    This is my favourite prawn and pasta dish - really light, scrummy and quick to prepare. I didn't serve it with salad and so I added some of the dressing to the pasta & it worked really well.

    I made this last week and its one of the best seafood pastas I've ever had! rather than serving it with salad on the side, i mixed in some rocket and drizzled the dressing over the whole thing and it worked really well! The sugar snap peas make it so fresh and yummy!! Will be a firm fave in our house!

Ingredients

  • 280g linguine pasta
  • 200g sugar snap peas , trimmed
  • 2 tbsp olive oil
  • 2 large garlic cloves , finely chopped
  • 1 large red chilli , seeded and finely chopped
  • 24 raw king prawns , peeled
  • 12 cherry tomatoes , halved
  • a handful of fresh basil leaves
  • mixed salad leaves and crusty white bread, to serve

FOR THE LIME DRESSING

  • 2 tbsp virtually fat-free fromage frais
  • grated zest and juice of 2 limes
  • 2 tsp golden caster sugar
