  • half a 125g ball light mozzarella, torn

Method

  1. Place the chicken breasts between cling film sheets and bash out with a rolling pin until they are the thickness of a £1 coin. Dip in the egg, then breadcrumbs, mixed with half the Parmesan. Set aside on a plate in the fridge while you make the sauce.

  2. Heat oil and cook garlic for 1 min, then tip in passata, sugar and oregano. Season and simmer for 5-10 mins.

  3. Heat grill to High and cook the chicken for 5 mins each side, then remove. Pour the tomato sauce into a shallow ovenproof dish and top with the chicken. Scatter over the mozzarella and remaining Parmesan and grill for 3-4 mins until the cheese has melted and the sauce is bubbling. Serve with vegetables or salad and some pasta or potatoes, if you like.

Ate this with kids, with new pots and green beans and it got a big thumbs up from all of us, would be nice with pasta or rice too. Pre-cooked the chicken and tomato sauce earlier in the day, then warmed sauce and grilled as per recipe after school. Quick and easy, great midweek recipe for family tea.

I made this over the weekend and once cooked was amazing!! Very hard to believe this has so few calories though and I am really not sure where the timings came from? 15 minutes for prep? More like 45-60 minutes but never the less very tasty!

SorrY but I was disappointed with this dish. I found the coating on the chicken very dry. Would not cook it again

It was a pretty good recipe, although it took over the prep time. It was a little bit bland, so I added more herbs and some chilli to the mix :)
It was filling, cheap and I'd make it again! :)

Loved this recipe. The chicken is a bit fiddly I suppose but hardly rocket science. It's a nice and interesting way to do chicken/tomatoes and looks pretty impressive. I don't like jars of sauce so made a basic tomato sauce with roasted garlic, onion, fresh tomatoes, fresh basil and plenty of seasoning. Served with salad. Delish!

Very tasty and easy recipe. Following advice in previous comments I used all of the mozzeralla. I served it with spaghetti and reserved some of the tomato sauce to mix through the spaghetti.

Great, easy recipe, I made this with tagliatelle and went really well with it. I would probably use the whole of a mozzerella ball as more cheese would have been perfect. Definitely a quick, tasty and very easy recipe!

Absolutely delicious. However, took me longer than 30 minutes. I also used most of my kitchen equipment and was washing up for the rest of the evening! Definitely worth the effort, going to be making it again soon.

This was a huge hit with all the family and so easy! I did use 4 chicken breasts instead of two and was pleased that i did as I don't think it would have been enough for all us........but perhaps we are just greedy! Served it with pasta and salad and will definitely be making this again.

Fabulous, so easy and tasty, I used a full mozzarella but to be honey it didn't need it. Will be making his as my next dinner party dish served with tagliatelle.

This was delicious! Followed the directions other than used a tin of chopped toms and blitzed as had no passata and added a splash of balsamic vinegar to the sauce.

Also chopped up some bacon with the fat cut off and added that on top.

Served with home made oven chips.

Made this tonight. Looked good but we thought the tomato sauce somehow overpowered things a bit, made it all a bit bland, because we couldn't really taste the cheese! Will probably make again but tempted to replace the mozzarella with some cheddar or stronger tasting cheese. Might have been nice with a slice of bacon on top too (although obviously not as healthy ;-))

I put half the mozzarella ball in the sauce along with some parmesan and it made the sauce really creamy yum yum.

Absolutely delicious. I too used the whole ball of mozzarella, we all loved it, it's going to be a firm favourite. Although I did it as the recipe, and will do again, it did occur to me that for a really quick mid week meal you could 'cheat' by using ready breaded chicken breasts!
