  • half a 125g ball light mozzarella, torn

Method

  1. Place the chicken breasts between cling film sheets and bash out with a rolling pin until they are the thickness of a £1 coin. Dip in the egg, then breadcrumbs, mixed with half the Parmesan. Set aside on a plate in the fridge while you make the sauce.

  2. Heat oil and cook garlic for 1 min, then tip in passata, sugar and oregano. Season and simmer for 5-10 mins.

  3. Heat grill to High and cook the chicken for 5 mins each side, then remove. Pour the tomato sauce into a shallow ovenproof dish and top with the chicken. Scatter over the mozzarella and remaining Parmesan and grill for 3-4 mins until the cheese has melted and the sauce is bubbling. Serve with vegetables or salad and some pasta or potatoes, if you like.

Delicious! A really good dish. Served it with courgettes and rustic potatoes (chop up white potatoes into small cubes place on a baking tray and drizzle with olive oil and dried mixed herbs then cook for about 25 mins) Will definitely use this recipe again.

I really don't understand how people thought it was fiddly or that the prep took a while, it was very simple and quick to make.
It tasted gorgeous, I forgot to add any parmesan and used a full mozzarella ball and like another poster said my kids thought it tasted just like pizza. I served it with baby potatoes and green beans, I wasn't sure how the baby potatoes would go with it but they were fab, definitely a keeper!

This was delicious! 2 chicken breasts with sides is plenty to feed 3. Made some minor alterations which worked well; used passata with chilli and bashed the chicken to about 0.5cm so thicker than suggested which resulted in a good texture. I used a full ball of mozerella instead of 1/2 and this was a bit much by my standards but my boyfriend disagreed! I served it with herby roast potatoes and broccoli. Will definately make again.

This recipe is lovely! I didn't like the sound of bashing the chicken so just left chicken breasts as they come. Couldn't get fresh breadcrumbs so used dried ones instead. Added shallots to sauce. It went down a treat for me and my boyfriend. There was only enough for 2 of us though!!

Yum yum, and also got the thumbs up from super health driven fuss pot family member. I doubled the chicken and still enough egg and breadcrumbs but worth doubling the sauce next time.

Left out the mozzarella as not everybody likes this all like this. It has now become one of my staples. Tried serving it with pasta and rice and both work well

We really liked the flavours of this! Didnt think it would taste of much but the passata gave it a lovely flavour and we added extra herbs and garlic and a splash of balsamic vinegar as someone else had suggested. I had to use 2 normal sized chicken breasts for 2 of us as the other half has a hearty appitite especially after rugby training and a chicken breast between us would not have been enough! Served with brown rice and veg. I think I would possibly add a tin of chopped tomatoes to the sauce next time as there wasnt really enough, but the passata has a strong flavour so you cant use too much of it. I will definitely make again though!

I have also done this dish with turkey steaks and it works well. I popped mine into the oven for 20 mins instead of grilling and also added more fresh herbs to increase the flavour. Very tasty and easy.

Cooked this tonight with some linguine pasta and it tasted lovely. A few things though, I also added the whole pack of mozzarella. I would also add extra passata to make more sauce and some extra seasoning as it was a bit bland otherwise those who like a kick in their food may not like this.
I'd definitely make this again.

I thoroughly enjoyed this dish and served it with a large green salad. I would perhaps season the breadcrumbs a little more as my brand of Parmesan was not salty enough but it was still delicious.

Just cooked this 2nite and it's fab!!!! The whole family loved it, the only change I would make is more sauce, but that's only because it's so scrummy. Cooked it with pasta and it has become the new family favourite!! Thank u :)

Loved this! Delicious and grilling makes it a healthier option. I found it really simple to make. We did actually eat this amount between two but maybe we were just being greedy because it tasted so good!

Ate this with kids, with new pots and green beans and it got a big thumbs up from all of us, would be nice with pasta or rice too. Pre-cooked the chicken and tomato sauce earlier in the day, then warmed sauce and grilled as per recipe after school. Quick and easy, great midweek recipe for family tea.

I made this over the weekend and once cooked was amazing!! Very hard to believe this has so few calories though and I am really not sure where the timings came from? 15 minutes for prep? More like 45-60 minutes but never the less very tasty!
