Method

  1. Place the chicken breasts between cling film sheets and bash out with a rolling pin until they are the thickness of a £1 coin. Dip in the egg, then breadcrumbs, mixed with half the Parmesan. Set aside on a plate in the fridge while you make the sauce.
  2. Heat oil and cook garlic for 1 min, then tip in passata, sugar and oregano. Season and simmer for 5-10 mins.
  3. Heat grill to High and cook the chicken for 5 mins each side, then remove. Pour the tomato sauce into a shallow ovenproof dish and top with the chicken. Scatter over the mozzarella and remaining Parmesan and grill for 3-4 mins until the cheese has melted and the sauce is bubbling. Serve with vegetables or salad and some pasta or potatoes, if you like.

After always making the same dishes over and over I came across this so decided to make it. It's so easy to make and everyone loved it - even my elderly mother who doesn't really venture much when it comes to food Will definitely add this to the repertoire!!

Really delicious. I used the whole mozzarella and a chicken breast each. Fussy DD loved it and has asked for the sauce to be used with other dishes. Served with pasta for DD and salad for DH and I. Both of them hate Parmesan, so shhhhh. Not too sure why but it did take longer than I thought and it did generate a lot of washing up. Will definitely make it again. I think the idea of prepping in advance then finishing later is a good one, plenty of time to clear up in between!

Chicken breasts were fileted nice & thin so I didnt have to bash them! Used a tomato & basil sauce instead of passata, and used breadcrumbs with garlic & parsley (purchased in a spanish supermarket). Was absolutely delicious & will definitely be making this again!

I love this recipe and so does the rest of the family. I use gluten free bread for the breadcrumbs and it still works perfectly.

Really tasty, we loved it. The only thing I would change is to add more flavours to the passata (more oregano, more garlic and some basil). It was quite fiddly and took longer than 15min to prep. I would definitely make it again, on the weekend when I've got a bit more time.

Great, simple recipie. I added sliced chestnut mushrooms to the sauce and fresh basil rather than oregano.
Lovely!

Added shallots & peppers (all finely chopped) to garlic at the start to make the sauce a hidden veg fest for the picky children! Served with pasta as the sauce is perfect!

Used a full ball of mozzarella, added an extra clove of garlic. The result was a hit with the whole family . Super quick, super easy and super tasty!

Yum! So quick and easy and yet so tasty. Followed the recipe exactly, adding seasoning at the appropriate places. Served it with pasta and it went really well. Will definitely make again.

Very good.
Made some alterations due to cupboard/fridge contents which all worked well:
-Replaced passata with a tin of tomatoes and 2 tbsp tomatoe puree
-Used half the amount of parmasan
-Replaced mozarella with low fat garlic and herb soft cheese.
Will definitely make again - thanks!

Easy to make but really quite bland. My boyfriend seemed to like it but he eats anything. Definitely wont be making this again. What a waste!

Extremely tasty indeed - and if you're feeling cheeky, add cheddar and more mozzarella =P

Delicious, served it with spaghetti. I did 3 chicken breasts and a bit more sauce etc aswell as we're very greedy and past experience has taught me that recipes never result in big enough meals for all 4 of us!
