Turkish one-pan eggs & peppers (Menemen)

This gutsy dish is genuine street food and a brilliant family dish for brunch, lunch or supper.

Method

  1. Heat the oil in a heavy-based frying pan. Stir in the onions, pepper and chillies. Cook until they begin to soften. Add the tomatoes and sugar, mixing well. Cook until the liquid has reduced, season.
  2. Using a wooden spoon, create 4 pockets in the tomato mixture and crack the eggs into them. Cover the pan and cook the eggs over a low heat until just set.
  3. Beat the yogurt with the garlic and season. Sprinkle the menemen with parsley and serve from the frying pan with a dollop of the garlic-flavoured yogurt.

    I dont like too hot a chilli, so I used twice the pepper, then added a small pinch of chilli powder and a tea spoon of paprica. Realy lovley filling meal. A bit of bread finshes it off perfectley.

    When I made this I struggled to get the eggs to cook completely and found the tomato flavour dominated. Tasted pretty rank and fed it to the bin. Seeing the other high ratings almost tempts me to try again. Almost.

    I really liked this dish. Following other people's suggestions, I too fried the garlic (3 cloves) with the onions and peppers and I added some chestnut mushrooms. Garnished with coriander as my family doesn't like parsley. The yogurt helped to balance out the kick of the chilli. Tasted delicious and felt very healthy to me, so would definitely make it again.

    Forgot to say, I left out the sugar. Absolutely no need for it - the tinned tomatoes make it more than sweet enough IMO.

    Fantastic recipe. I also left out the yogurt as my boyfriend doesn't like it. I put the garlic straight into the dish, added a few mushrooms and lots of chillies as we like our spice. I served it with bread and we both thoroughly enjoyed it. I will definitely make this dish again. So simple, uses ingredients we always have in and works for breakfast, lunch or dinner.

    We really enjoyed this dish. After reading the comments I added some mushrooms to bulk it out a bit more. Served with bread. Will do again soon as it's so quick when getting home from work.

    Loved it! Put some garlic in with the onions at the beginning (as well as with the yogurt at the end), and used coriander instead of parsley. Quick and delicious!

    My husband found this recipe and made it for me Mother's Day morning (I usually make it and we both love it and he wanted to surprise me) Nothing like the real Turkish thing! Dry flavourless... Puts Turkey cuisine to shame for what can be a truly marvellous simple dish! That is all!

    My husband has just said I've not said what I'd do different! Soften and brown onions for longer, throw in garlic, again brown to get the flavour, and use four cloves. Leave the Chilli seeds in if you like it spicy and up the amount of From two to three or four if you like to feel it. Sugar.... NO!!! Why why why?!? I would rather mushrooms than peppers, but that's personal, I prefer mushrooms as they add to a softer texture which compliments other more textured food you may serve with. Two cans of plum tomatoes make it so much juicier. Mmmm Also, again personal preference, I scramble my eggs into the mix as this is how we've had it many times in Turkey and it's lush, and never in all my days have I had it with Parsley and never would I again! Kills the rich beauty of the dish. Finally ENJOY!!!! :0D

    I added chorizo and a clove of garlic to the cooking peppers and onion for a little extra flavour. The dish was absolutely delicious with nice bread to eat alongside it. Very simple to make but very flavoursome.

    I tried the dish. It was a little bit sweet at the beginning, but when the eggs started kicking in, It tasted very good. After a few hours, I used the leftovers in a sandwich and it was simply perfect. Will definitely try it again, probably making few changes like adding more chilli to make it more spicy.     Made without yoghurt. Delicious. Easy to make and you can be creative and use whatever veg you want. Will definitely make again.

    This tasted fine and was very quick to put together but nothing amazing. I suspect if you added a few more ingredients, as suggested by other readers, it might make it more interesting. I halved the ingredients for 2 people but thought the portions were quite small (which I could have known looking at the ingredients). If you're looking for something similar, I would make the One-pan summer eggs on the GF website.
