  1. Heat the oil in a heavy-based frying pan. Stir in the onions, pepper and chillies. Cook until they begin to soften. Add the tomatoes and sugar, mixing well. Cook until the liquid has reduced, season.

  2. Using a wooden spoon, create 4 pockets in the tomato mixture and crack the eggs into them. Cover the pan and cook the eggs over a low heat until just set.

  3. Beat the yogurt with the garlic and season. Sprinkle the menemen with parsley and serve from the frying pan with a dollop of the garlic-flavoured yogurt.

Great recipe tried this for a pick n mix night. Added a few little extras like some mushroom and served with rocket which added a lovely touch to it.. I would note that all the sugar is not needed if you don't like sweet things that is..

A good foundation. We found halfway through eating it that the flavour didn't develop anymore, although it was pretty satisfying! The eggs took a long while, and then almost overcooked when I wasn't looking (whoops). So glad they didn't! One of the most satisfying things about this dish is seeing that gorgeous rich buttery yolk spill out and soaking it up with a steaming hunk of bread. (We had some crusty granary rolls straight from the oven - thanks to par-baked goods! - and they were perfect.) The garlic yoghurt is a brilliant foil - I'd urge you not to miss it out. 2 tins of tomatoes means it's actually thick and saucy, and lots of garlic in the sauce gives it greater depth. I didn't bother with the sugar, but did stir in loads of spinach, as it went really well with the eggs. Yum!

Delicious. I added a teaspoon of tomato puree to make it more tomato-ey. Chillies not essential if seasoned well and making it for the kids.I omitted the sugar, but I guess you could add a smidgen of manuka honey to make it super good for you.

decided to make this as I fancied something a bit different. its very easy to make and was really, really tasty! to go with it I just toasted some tortillas and cut them into wedges, which worked really well with it.

Added 4 cloves of garlic and some cayenne pepper - did not add the sugar.

Fleshed it out with some zucchini and mushroom. Added greek fetta just at the end.

Super easy and tasty!

Family liked it. Like Joyjoybird I left out the sugar and used 4 cloves of garlic, 2 tins of tomatoes and added courgettes. The dish needs seasoning with salt and pepper at least. Eggs added whole worked fine. I'll try scambled next time.
Yoghurt with garlic (+ seasonng) really gives it that extra dimension - don't skimp on this bit!

Lovely, added 3 cloves of garlic, courgette and some mushrooms to the mix. Omitted the sugar, as others have said, this really isn't necessary and didn't bother with the yogurt. Eggs took ages to cook so sped up the process by covering the frying pan with a lid so they could steam a bit. Served with a few slices of buttered granary bread. I thought it was yummy, hubby thought it was ok and has requested scrambled eggs next time.

Very easy (if a bit long), very good. Changed nothing except that I used 2 peppers (1yellow, 1 red).

This tasted fine and was very quick to put together but nothing amazing. I suspect if you added a few more ingredients, as suggested by other readers, it might make it more interesting. I halved the ingredients for 2 people but thought the portions were quite small (which I could have known looking at the ingredients). If you're looking for something similar, I would make the One-pan summer eggs on the GF website.

Made without yoghurt. Delicious. Easy to make and you can be creative and use whatever veg you want. Will definitely make again.

Try mixing in some pancetta at the start. Be careful not to overcook the eggs!

I tried the dish. It was a little bit sweet at the beginning, but when the eggs started kicking in, It tasted very good. After a few hours, I used the leftovers in a sandwich and it was simply perfect. Will definitely try it again, probably making few changes like adding more chilli to make it more spicy.
