Turkish one-pan eggs & peppers (Menemen)

This gutsy dish is genuine street food and a brilliant family dish for brunch, lunch or supper.

Method

  1. Heat the oil in a heavy-based frying pan. Stir in the onions, pepper and chillies. Cook until they begin to soften. Add the tomatoes and sugar, mixing well. Cook until the liquid has reduced, season.
  2. Using a wooden spoon, create 4 pockets in the tomato mixture and crack the eggs into them. Cover the pan and cook the eggs over a low heat until just set.
  3. Beat the yogurt with the garlic and season. Sprinkle the menemen with parsley and serve from the frying pan with a dollop of the garlic-flavoured yogurt.

    I cooked this for me and my hubby for our lunch today... well a modification of it because he doesn't like chilli. I used paprika instead and also did without the yogurt. I put the garlic in with the peppers, and onions and also added mushrooms. My adaptation was COMPLETELY delicious. I would definitely recommend serving this with loads of good bread and make sure you have enough bread left to mop up the plate at the end. I didn't and regretted it. My husband, however, did and once he'd finished mopping up his plate proceeded to carry on with mine with his remaining piece of bread. Thank you Good Food for publishing this wonderful recipe!!!! I think it's going to become a regular!

    'Menemen' is just the Turkish name for this dish. The Turks also cook another dish by the same name, which is basically scrambled eggs mixed with the same ingredients (tomatoes, peppers, onions, a pinch of red pepper flakes and parsley). They pre-cook the pepper/tomato mixture and then scramble in the eggs at the end. From a visual point of view, it has a touch of the 'dog's breakfast' about it, but it actually tastes really delicious, especially piled onto thick toast. This is the version that most housewives would cook at home - the Goodfood version tends to be the one you always find at stands in bus and railway stations for some reason.

    This was such a delicious meal, my husband and I really enjoyed it. It had a nice kick from the chilli, and the onions and tomatoes were so sweet. My husband didn't even mind that there wasn't any meat. Will definitely cook again, brunch, lunch or dinner!

    Pretty great dish. Just don't put the eggs in to early or the yellow part will get solid pretty fast. Nevertheless it tasted great and it's done really fast withing half an hour or so with no problems.

    Unexpectedly delicious! I made quite a huge mistakes. Used extra hot chillies and the whole dish was burning me inside out. Go easy on those. Served by itself without a yogurt.
